Creamy Homemade Bacon Guacamole Dip

Well.

We kinda have this thing, avocados and I. It was love at first taste. It’s creamy green goodness is unmatchable. Guacamole is centered around them. Toast pays tribute to them (ahem.. avocado toast) and there are shirts with pictures of them.

People love them some avocado.

And believe me, I am first in line at that avocado party.

Someday I hope to have an Avocado tree in our backyard. With the amount of avocados that I buy per week, it would save us some money!

The funny thing about avocados is they don’t really taste like much. Have you noticed that? They are creamy yes. But they aren’t tangy, sweet, salty. or spicy. They are just kinda neutral. But they are one of the most adored fruits ever. And yes, it is a fruit NOT a vegetable. (just like tomatoes)

These guys are most definitely the star of the show when they are brought to a party. Which is why it’s a MUST to have them! ESPECIALLY at a Cinco de Mayo party.

You know that Cinco de Mayo is next weekend right? And how fun that it falls on a Saturday this year instead of a weekday.

Last year, we created Maddie on Cinco de Mayo (or at least that’s what I’m claiming because the timing works out)… too many margaritas! haha This year, no more babies but let their be margaritas and guacamole galore.

I’m hosting a Cinco de Mayo party at our house and the list is bountiful –> Chicken Taquitos, Beef Fajitas, Carnitas, Pineapple Salsa, Churro Cheesecake Bars, Margaritas and Sangria. This Bacon Guacamole will definitely be there in all it’s glory!

I mean come on. Bacon + Guacamole. Sounds like a recipe for total deliciousness to me! Am I right?

Bacon Guacamole Ingredients

This easy guac is filled with classic ingredients for an authentic guacamole with a bacon-y twist. Here’s what you’ll need to make this guacamole dip:

  • avocado
  • bacon
  • red onion
  • fresh cilantro
  • roma tomato
  • jalapeno
  • fresh lime juice
  • garlic cloves
  • salt to taste

How to Make Bacon Guacamole

Making guacamole is simple! Here’s what you do:

  1. Mash your avocado in a bowl.
  2. Mix in the cooked bacon, onion, tomato, jalapeno, garlic and cilantro.
  3. Stir in the lime juice.
  4. Taste and adjust salt to taste.

That’s it! You’re definitely going to love every bite of this guacamole.

Tips for the Best Bacon Guacamole

Making guacamole is super easy, but there are a few things to keep in mind for the absolute best homemade guacamole!

  1. Pick ripe avocados. Look for avocados that are pretty firm and only have a slight give to them when you press gently with your fingers. Also look for avocados that still have the stem attached (that little knob at one end of the avocado).
  2. Use fresh ingredients. What makes a good guacamole really shine are quality ingredients! This is especially true with the cilantro. Don’t use try cilantro in your guac.

How to Store Leftover Bacon Guacamole

Guacamole can be tricky to store because it oxidizes and turns brown pretty quickly. The citric acid in the lime juice helps slow this process down, but not by much.

If you have leftover guacamole the easiest solution I’ve found is to place plastic wrap directly onto the guac to reduce the amount of oxygen it comes into contact with. 

Another option is to use this guac hack, which involves packing your guacamole into a bowl with a top, then covering it with water. The water seals out oxygen better than plastic wrap and doesn’t create any plastic waste either! When you’re ready to enjoy your homemade guacamole again, just drain off the water, stir and dig in.

Whichever method you choose, homemade guacamole can be stored in the fridge for up to 3 days.

Truthfully though, you probably aren’t going to have leftover guac! It’s just too good to stop eating until it’s gone.

Ingredients

Scale
  • 5 avocado, mashed
  • 3 strips of bacon, cooked and roughly chopped
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 roma tomato, diced (about 1/3 cup)
  • 2 tablespoons diced jalapeno
  • 23 tablespoons fresh lime juice
  • 2 garlic cloves, minced
  • salt to taste

Instructions

  1. To a large bowl, add mashed avocado, diced bacon, red onion, cilantro, tomato, jalapeno, lime juice, and minced garlic. Mix everything together, season with salt to taste.
  2. Serve!
