Aioli: it’s really just fancy mayo. I even know avowed mayo haters who will happily dig into a plate of truffle fries topped with aioli or a burger slathered with it. Maybe it’s the name change that does the trick, or maybe it’s the addition of other ingredients to add a little something-something to standard mayo. Truffle aioli is especially delicious, with its rich, complex flavor elevating any dish it touches. Add it to my Juicy Air Fryer Burgers and see what I mean!

How to Make Truffle Aioli

By starting with mayonnaise instead of making your own with eggs and oil, there’s practically nothing to this recipe. Super, super easy!

  • Combine. Add all of the ingredients to a small bowl.
  • Whisk. Use a whisk to incorporate all the ingredients into the mayo.

Tips and Variations

Here are some helpful tips and variations to customize your truffle aioli to suit your tastes!

  • Start with a GOOD mayo. People have big opinions about which mayonnaise brand is best. I won’t choose sides, but I will say that for the best truffle aioli, you’ll want to start with a mayo you love. 
  • Adjust the truffle oil to your liking. Truffle oil can be quite strong and some people like that flavor more than others. If you taste the aioli and you want it to have a more bold truffle flavor, go ahead and whisk in a bit more oil.
  • Experiment with herbs. Parsley or chives would both be nice additions to this recipe if you want to add another layer of flavor and pop of color.

Ways to Use Truffle Aioli

These are some of my favorite ways to use this recipe:

  • Truffle fries. Truffle fries are most often just tossed in truffle oil and topped with Parmesan and parsley, but you can make them extra delicious by adding your truffle aioli to a squirt bottle and drizzling it over the fries.
  • Burgers and sandwiches. Upgrade your burger or sandwich by spreading a generous amount of truffle aioli on the bun before adding your patty or fillings.
  • Dipping sauce. Use your truffle aioli as a dipping sauce. I love it with Air Fryer Asparagus and Air Fryer Roasted Potatoes!
  • Pizza topping. I wouldn’t put this on a pepperoni pizza, but a wild mushroom pizza? Heck yeah!

How to Store

Keep truffle oil refrigerated in an airtight container and use it within a week. This recipe should not be frozen because mayo separates when frozen and thawed.
