Have you ever set up a 6 person tent … in your house?

Well, I hadn’t, until this weekend! We won this tent in a Christmas Party Gift Exchange and haven’t used it yet. Growing up, my family use to go camping every year with all of my dads cop buddies.

Since Mike and I have moved down to Texas we haven’t gone camping once! Part of that is because of me …  well most of that is probably me. When they say everything is bigger in Texas … they mean EVERYTHING is BIGGER in Texas. The bugs (ughh..) and snakes!

Up north, the only bugs we had to deal with were mosquitos. Down here they have everything .. they are all huge and some fly! I just can’t handle sleeping and then all of a sudden having something crawl up my leg. I can’t do it, I won’t do it. So we haven’t done it.

But .. having a little boy changes things. I need to put on my big girl panties, suck it up, bring a crap load of bug and snake killer stuff and go camping. But to start things out … and because it is dreadfully hot outside we set up the tent inside the house this past weekend so Mike and Cason could have a little camp out.

When Mike got home from work he took his tape measure then him and Cason went all over the house measuring each room so they could set the tent up. The ONLY room that worked was the living room and even then Mike since had to move all the furniture up against the walls so this huge 6 person tent could fit.

It was great! Cason absolutely loved it! He was running all over the house trying to get the “stuff” he needed in the tent for his campout. He had ten cars, a batman utility belt, four pairs of shoes, all his stuffed animals, a sweatshirt, four blankets, his nap mat, his pillow, a comforter, and his ipad… oh and his backpack

Needless to say, I see many more inside campout nights in our future!

Maybe even outside campout nights since the fall is so close you can almost taste it which means cooler weather is just around the corner! Woohoo! Yippee… dancing for joy!

Speaking of fall. I told you on Monday that JHE is turning into all things Fall. Well I wasn’t kidding. We’re kicking everything off with this Rustic Cardamom Apple Galette topped with a Cinnamon Maple Mascarpone Cheese.

If you’ve never had a galette before you need to. As my husband said, “it’s like pie but in pizza form, it’s awesome!”

Instead of having to worry about making sure the pie crust goes over the edges of the pie pan perfectly and all that silliness. Just make a pizza out of the dough, put the filling in, fold the edges over, call it a rustic galette and then fall in love! This process is WAY easier than pie and honestly, I love the look of it. It’s so fancy in it’s own kinda way.

But the flavor, oh the flavor! Make sure to eat it warm so that the Maple Mascarpone melts all over the galette. I guarantee you’ll be in heaven! Did I mention that his pie is also GLUTEN FREE! What?!? Yup, that’s right. Tastes like the dream, is way easy to make, and has gluten free pie crust!

Description

This rustic Cardamom Apple Galette topped with a Maple Mascarpone is what pie dreams are made of. It’s easy to make, mind-blowing in flavor, and Gluten Free – you’ll fall in love!


Ingredients

Scale

Pie Crust:

  • 1 bag of Bob’s Red Mill gluten free pie crust
  • 20 tablespoons cold unsalted butter, cut into pieces
  • 68 tablespoon of cold water
  • 1 teaspoon ground cinnamon
  • 1 egg, beaten

Filling:

  • 3 large granny smith apples, peeled, cored, and thinly sliced
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon cardamom
  • 2 tablespoons honey

Mascarpone Topping:

  • 8 oz. mascarpone cheese
  • 1 tablespoon maple syrup
  • 1 teaspoon ground cinnamon

Instructions

  1. To a food processor add Bob’s Red Mill Pie Crust, butter, and ground cinnamon. Pulse 8-10 times, until butter is broken up.
  2. Pour the mixture into a large bowl, add 6 tablespoons of water. Using your hand mix the dough into it forms a ball. (if you need more water you can add up to more 2 tablespoons)
  3. Separate the crust mixture into two discs. Wrap with plastic wrap and place in the refrigerator for at least 1 hour.
  4. Preheat oven to 400 degrees.
  5. Remove one pie crust, put the other crust in a ziplock bag and place in the freezer to use at a later date.
  6. With the pie crust you will be using, place into in between two sheets of plastic. Gently roll the dough into a disc about 14″.
  7. Place the disc on a baking sheet lined with parchment paper.
  8. In a large bowl, add sliced apples, ground cinnamon, cardamom, and honey. Using a spoon mix all the ingredients.
  9. Line the apples up in the center of the pie crust disc, pour the juices leaving 1 1/2″ on the edges.
  10. Fold the edges over the top of the apple filling.
  11. Lightly brush the pie crust edges with egg wash.
  12. Bake galette for 30-40 minutes, or until edges are browned and apples are tender. Remove and let sit for 5 minutes before serving.
  13. In the meantime, in a small bowl add mascarpone cheese, maple syrup, and ground cinnamon. Mix until combined.
  14. Top each slice of apple galette with a dollop of mascarpone cheese mixture.
