Truffle fries are on restaurant menus everywhere these days, but I just can’t order them—because once that basket is in front of me, I’m gonna eat ALL THE FRIES. (The same thing happens when I order Buffalo Chicken Wings. Go figure!) They are just impossibly delicious, with that perfect crispy texture, the shower of freshly grated Parmesan, and the earthy, a-little-bit-funky truffle flavor. Good thing I can make them at home and lighten them up without sacrificing any of the deliciousness!

- Russet potatoes – The classic French-fry-fry. They’re starchier and crispier, but if you want a potato that’s a little more creamy and buttery, you can swap in Yukon golds.
- Olive oil – To coat the fries so they get crispy.
- Garlic powder – For a savory depth of flavor without the bite of fresh garlic.
- Truffle salt – Using truffle salt instead of truffle oil keeps the calories in check.
- Grated Parmesan cheese – Adds a salty, nutty finish. Use freshly grated cheese; it melts better.
- Chopped chives – For a fresh, herby garnish. Parsley works too!
- Truffle aioli – For extra truffle flavor. Use it as a dip or put it in a squeeze bottle and squeeze it over the top.
How to Make Parmesan Truffle Fries

- Prepare. Preheat your oven to 400°F and soak the cut potatoes in cold water for 30 minutes. Drain and dry.
- Season the fries. Add the potatoes to a bowl and toss them with the olive oil, garlic powder, and truffle salt.



- Bake. Divide the potatoes between two baking sheets. Bake for 15 minutes, flip, rotate the sheets, and bake 15 to 20 minutes more.
- Finish. Season with additional salt or truffle salt, then sprinkle with Parmesan cheese and chives. Serve with the truffle aioli if desired.

Tips and Variations
Here are some additional tips and variations to help you customize your fries and make sure they turn out perfect!
- Dry the potatoes super well. This will help them crisp up in the oven, rather than steaming.
- Cut the potatoes to the same size. The key to ensuring that your fries all finish cooking at the same time!
- Add truffle oil. If you don’t have or can’t find truffle salt, you can use truffle oil instead. Just remember, a little goes a long way!

How to Store and Reheat Leftovers
- Refrigerator: This is a recipe best enjoyed immediately, but if you have any leftover Parmesan truffle fries, store them in an airtight container in the refrigerator for up to 3 days.
- To reheat: To reheat in the oven, spread the fries out on a baking sheet and bake at 400ºF until they are heated through and crispy again. The air fryer also works very well, but use the microwave as a last resort. Your fries will be soggy!

Ingredients
- 5 russet potatoes, sliced into thin fries 1/4″ thick
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon truffle salt
- 1/3 cup of grated parmesan cheese
- 1/4 cup chopped chives
- optional: Truffle Aioli
Instructions
- Preheat oven to 400°F.
- Add sliced potatoes to a large bowl of water, soak for 30 minutes.
- Drain the potatoes, lay on a baking sheet and pat down with a paper towel to dry.
- Add dry potatoes to a large bowl along with olive oil, garlic powder, and truffle salt. Toss to mix everything together.
- Place potatoes in a single layer on two baking sheets. They will have to be on separate racks when you place them in the oven.
- Bake 15 minutes. Using a thin metal spatula, flip the fries. Rotate the baking sheets between racks. Continue to roast until brown, another 15-20 minutes.
- Remove from oven when they are slightly browned and crispy.
- Season with salt or truffle salt as needed. Sprinkle with parmesan cheese and garnish with chive.
