 Hello All!  My name is Carrie and I am the creator and recipe developer behind Frugal Foodie Mama.  (You can find out more about me & my blog and where to find me online in that nifty little blurb at the end of this post. 😉 )  I am honored to be hanging out at Joyful Healthy Eats while Krista is taking some time off and celebrating her anniversary this week. 
 
I thought I would share with you all my recipe for Light & Easy Garlic Lemon Pasta {For Two}.  I end up making quite a few meals for just my husband & I as my son spends every other week at his father’s, and our baby girl isn’t quite yet eating an entire meal’s worth of food.  This pasta dish is my go-to when I am wanting to make something fresh, quick, and a bit elegant for my husband and I.  What is great about this recipe is that it can also be easily doubled (or tripled even) if you have a few more tummies to fill than just two. 😉

Light & Easy Garlic Lemon Pasta {for Two}: Guest Post

Ingredients

  • 2 garlic cloves, minced
  • 1 1/2 tablespoon olive oil
  • juice of 1 lemon
  • 1/4 cup Parmesan cheese
  • handful of fresh basil leaves, chopped
  • enough cooked angel hair pasta for 2
  • salt & pepper, to taste

Instructions

  1. In a medium saucepan, start your water to boil for your pasta. I like to throw in a couple of pinches of salt to my water before boiling.
  2. While the water starts to boil, mince your garlic.
  3. In a medium skillet, heat the olive oil for a minute or two. Add the garlic and saute 1-2 minutes, just until it starts to turn golden. Remove from the heat and set aside.
  4. Once the water is boiling, throw in your angel hair pasta. It should only take 3-4 minutes to cook since it is a thin pasta.
  5. Drain your pasta once cooked and then dump into a large mixing bowl.
  6. Scrape the garlic and olive oil in the skillet over the cooked pasta. Squeeze in the lemon juice and then toss in the Parmesan cheese and chopped basil. Toss well.
  7. Taste the pasta and then season with salt & pepper to your taste.
  8. Divide the pasta onto two plates and garnish with additional shredded Parmesan and fresh basil, if you prefer.
  9. Enjoy!
Add some warm, crusty bread and a fresh salad and you have the perfect light & healthy dinner for two! 🙂
