Do you ever feel overwhelmed, caught up in the moment with emotion that it brings you to tears?

Usually it happens to me when its around “that time of the month” haha.. but not this time.

We were at church this past Sunday. We were singing a song that we’ve sang before, but for some reason the words just struck right to my heart. It was exactly what I needed to hear.

The day before I was working on my blog, trying to get stuff ready for the next week. I flipped over to my google analytics account to see “how my blog numbers” were doing and it was not looking so hot. In fact for the first time I was kinda discouraged about it. Normally I can pull myself up, I’m not one to just sit and sulk. But I let the numbers get the better of me, and let them define who I am as a person. This is popped in my head —> “If people aren’t looking at your blog its because they don’t like what you have to say, they aren’t interested in your recipes, or your photography. You pour time into this ‘blog’ and it’s not getting better, you’re just not as good as the others out there!”

Total lie! But I just couldn’t get it out of my head. Until that is, the next morning when I heard this song. God knew exactly how I needed to be encouraged. He has called me to write this blog, be vulnerable, share my heart with you and my recipes so that is what I’m going to do. Regardless of the numbers. They do not define who I am. Only He does!

The words to this song are absolutely beautiful, it makes me visualize a daddy coming into his daughters room while she is sleeping, pushes her hair back from her face and says “i’m so pleased with you and you know that I will always be here no matter what.” Gives her a kiss then leaves. That is who God is, he’s the one who comes into our rooms to tell us exactly what we need to hear because he loves us. He doesn’t hold back his love from us one bit, we just have to be willing to receive it! This is what overwhelmed me and brought me to tears that Sunday morning! I hope it encourages your hearts sweet friends!

Chimichurri is quickly becoming one of my favorite ways to add flavor to a dish. In fact the other day I made a bruschetta with a chimichurri base, it was incredible! That is coming soon too! But for today, let’s focus on this Grilled Flank Steak with Avocado Chimichurri!

Super simple to make, gluten free, and fits into the paleo diet! Best part is it packs a huge punch of flavor!

My Family Loved This Homemade Chimichurri Sauce Recipe

The Grilled Flank Steak I kept nice and simple, just salt and pepper to season. The flavor comes from the chimichurri! It is packed with fresh herbs, lime juice, tangy vinegar, and some heat from the red pepper flakes. Then I mixed this chimichurri base with creamy avocado and whoazer! It totally puts this dish over the top. We had family over the night I made this and it was gone in seconds! Next time I will double this recipe for sure!

Description

This juicy Grilled Flank Steak is easy to make and has a homemade Avocado Chimichurri that is so full of flavor! It’s the perfect steak recipe for a dinner that is ready in less than 20 minutes!


Ingredients

Scale
  • 2 lb flank steak
  • salt & pepper to season

Avocado Chimichurri:

  • 3/4 cup fresh cilantro
  • 1 tablespoon fresh oregano
  • 1 garlic clove
  • 3 tablespoons red wine vinegar
  • 4 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 avocados, diced

Instructions

  1. Heat grill to medium high or 400 degrees.
  2. To a food processor add, cilantro, oregano, garlic, red wine vinegar, olive oil, lime juice, red pepper flakes, salt, and pepper. Blend until smooth.
  3. In add small bowl add diced avocado and blended chimichurri sauce. Lightly toss to coat, be careful not to mush the avocado. (you want them to remain diced)
  4. Season a room temperature flank steak with salt and pepper on both sides.
  5. Place steak on grill and cook for 4-6 minutes per side.
  6. Remove from grill, let sit for 2-3 minutes. Slice steak.
  7. Serve with avocado chimichurri sauce

  7. I made the avocado chimichurri sauce tonight and it was so delicious! I also served it with flank steak but made it a bit differently (the store had a pre-marinated version). Husband loved the avocado chimichurri sauce too and he’s super picky! yay!
