The perfect Strawberry Mojito Recipe – easy, fresh, minty, fizzy, limey and filled with sweet juicy strawberries for the most refreshing cocktail this summer! It is sure to quench your thirst!

Have I told you that I am in desperate need of a vacation! I found myself searching for vacations online last night… you know what I typed in to the google machine?

“Huts over the water”

That’s all I want right now! I want to stay in a hut that is over that water, where I can see beautiful clear blue water and fish swimming beneath me!  I want to lay outside in my bikini, soaking up the sun, eating fresh seafood, and drink cocktails all day! Sounds like perfection right?

Whenever Mike and I go on a “mommy and daddy” vacation we typically go the all inclusive route because well, who wants to cook or wash dishes on vacation? Plus it’s kinda nice to have someone just bring you drinks and food as you want or need it.

I can still remember the first time we went on vacation together, it was our honeymoon. We were down by the pool in the morning and thought it was the coolest thing to be able to just order drinks. Mike kept ordering this thing called a “Dirty Monkey”, which had vanilla ice cream, chocolate liquor, rum, and bananas in it – they were good but really heavy on your stomach! I kept ordering Mojitos .. finally Mike tried my drink and realized they were amazing and WAY more refreshing than his heavy cream based drink. Wisely he decided to switch his drink of choice and was much happier the rest of the vacation.

Needless to say Mojitos are our vacation drink and every time I have one I think of the beach. So I thought it was fitting, since I was searching for beach vacations last night to have a Mojito recipe today and bring us ALL to the beach!

The base and star of this Mojito are the fresh sweet juicy strawberries! On a side note, have you tried the strawberries lately? They are huge and so incredibly sweet! I am LOVING them and that their price is back down again so I can buy more! Woohoo!

Ok, onto the recipe for this giggle juice. There is no puree used in this cocktail, instead, I chopped up fresh strawberries and muddled them with fresh mint for the ultimate refreshing sip. Instead of a simple syrup I used agave as the sweetener. This Strawberry Mojito blows all other mojitos out of the water!

  • 8 large strawberries, sliced
  • 812 leaves of mint
  • 4 teaspoons of agave
  • 6 tablespoons of lime juice
  • 8 oz. Bacardi Silver Rum
  • 2 cups seltzer water or club soda


  1. Add strawberries and mint to the bottom of a large pitcher. Using a muddler (or the back of a spoon) muddle the fresh and herbs together. (basically your smashing them)
  2. Next add in the lime juice, agave, and rum. Stir around to mix everything.
  3. Finish off with the seltzer water. Stir and serve!
