Cilantro Lime Rice

Cilantro Lime Rice is the perfect recipe for Cinco de Mayo. Texmati brown rice is mixed with lots of lime flavor and fresh cilantro for a delicous side dish!

Yeah for “hump day”, aka Wednesday! Hump Day means that you are officially at the half way mark for the week and are about to go “over the hump” to the weekend. What are your plans for the weekend? Anything exciting? Any new movies you want to go and see? I know we want to see that new G.I. Joe movie as well as the new Ironman that comes out soon! 🙂

For todays “hump day” post and Cinco de Mayo themed recipe we are going to make a side dish. I truly believe that you can make all the main dishes you want, but without a rocking side dish it doesn’t mean a thing. This Cilantro Lime Rice will definitely fit the bill. The intense lime flavor partnered with fresh cilantro is the perfect compliment. I paired it with my Tequila Lime Chicken, which will make it lovely appearance on helping hubbie friday. But this Cilantro Lime Rice could go with Fajitas, Beef Tacos, my Creamy Tomatillo Enchiladas, or Skirt Steak with Chimichurri Sauce!

How to Make Cilantro Lime Rice

To get started, chop up 1 cup of yellow onion and mince 1 garlic clove.

Heat a large skillet to medium high heat. Add 2 T. of olive oil and 1 cup of onions. Saute until translucent {about 3-4 minutes} and then add garlic. Stir for 30 seconds and add 1 cup of uncooked Texmati Brown Rice.

Stir to incorporate all ingredients. Then add 1 1/2 T. of lime zest.

Let the rice brown for 2-3 minutes then add 2 1/4 cup of chicken broth {low sodium}, juice of 1 lime, and 1/2 cup of fresh cilantro {chopped}. Stir so all ingredients are mixed together.

Bring to a boil. Cover and let simmer for 45 minutes.

Finish off with fresh lime zest and cilantro for final touches! :)Enjoy!

Ingredients

Scale
  • 1 tablespoon avocado oil
  • 1 cup onion, chopped
  • 1 garlic clove, minced
  • 1 cup of minute jasmine rice
  • 1 cup of chicken broth 
  • 1 tablespoon lime zest
  • juice of 1 lime
  • 1/2 cup of fresh cilantro, chopped

Instructions

  1. Heat a large pot to medium-high heat. Add avocado oil and onions to pan. Saute until translucent, about 3-4 minutes, and then add garlic. Saute for 30 seconds.
  2. Stir in Jasmine Rice. Cook for 30 seconds and add in chicken stock. 
  3. Bring to a boil and reduce to simmer for 5 minutes. Then remove from heat and let rest for 5 minutes.
  4. Fluff rice and stir in lime zest, lime juice and fresh cilantro.
  5. Serve.
