Cilantro Lime Rice

Ingredients

  • 1 cup of Texmati brown rice
  • 2 T. olive oil
  • 2 1/4 cup of chicken broth {low sodium}
  • 1 1/2 T. lime zest
  • juice of 1 lime
  • 1/2 cup of fresh cilantro, chopped
  • 1 cup onion, chopped
  • 1 garlic clove, minced

Instructions

  1. Chop up yellow onion and mince garlic clove.
  2. Heat a large skilletto medium high heat. Add olive oil and onions. Saute until translucent {about 3-4 minutes} and then add garlic.
  3. Stir garlic for 30 seconds and add Texmati Brown Rice.
  4. Stir to incorporate all ingredients.
  5. Add 1 1/2 T. of lime zest.
  6. Let the rice brown for 2-3 minutes then add chicken broth, juice of 1 lime, and fresh cilantro {chopped}.
  7. Stir so all ingredients are mixed together.
  8. Bring to a boil.
  9. Cover and let simmer for 45 minutes.
  10. Finish off with fresh lime zest and cilantro for finishing touches! 🙂
