Description
Cilantro Lime Rice is the perfect recipe for Cinco de Mayo. Texmati brown rice is mixed with lots of lime flavor and fresh cilantro for a delicous side dish!

Ingredients
- 1 cup of Texmati brown rice
- 2 T. olive oil
- 2 1/4 cup of chicken broth {low sodium}
- 1 1/2 T. lime zest
- juice of 1 lime
- 1/2 cup of fresh cilantro, chopped
- 1 cup onion, chopped
- 1 garlic clove, minced
Instructions
- Chop up yellow onion and mince garlic clove.
- Heat a large skilletto medium high heat. Add olive oil and onions. Saute until translucent {about 3-4 minutes} and then add garlic.
- Stir garlic for 30 seconds and add Texmati Brown Rice.
- Stir to incorporate all ingredients.
- Add 1 1/2 T. of lime zest.
- Let the rice brown for 2-3 minutes then add chicken broth, juice of 1 lime, and fresh cilantro {chopped}.
- Stir so all ingredients are mixed together.
- Bring to a boil.
- Cover and let simmer for 45 minutes.
- Finish off with fresh lime zest and cilantro for finishing touches! 🙂
