Pancetta Pasta with Goat Cheese Sauce

So I consider myself a person who will try just about anything.

Well, maybe not quite to the extent of my husband who has eaten monkey brain in the jungles of Ecuador.

But anything that you can buy at a grocery store I will try.

Now, when I was little that was a totally different story.

I was petrified to try fish, anything that I could see the eyes of before I ate it was a little weird.

I love it now but was scared to death of it back then!

The other one I was scared to try were brussels sprouts. I’m not sure why I was dead set on the fact that those things were not going in my mouth, but I knew I was never going to lay a hand on them because my friend said they were gross. Clearly I am swayed by what everyone else says…

But man was I wrong!

I finally… at the age of 29 tried brussels sprouts and holy moly guys I am addicted.

They are great sautéed in a pan with some butter or caramelized to sweet withered perfection with some balsamic vinegar.

A couple months ago I saw this tasty pasta recipe with brussels sprouts that a friend of mine Lauren from {Climbing Grier Mountain} made, if you haven’t checked her out yet you need to. Not only does she have incredible photography but her recipes beam with creativity and leave you inspired.

Guys, let me just tell you. When I am looking for some comfort food now … I go to this dish.

It has the creamy savory aspect with the goat cheese, the earthly sweet taste from the caramelized brussels sprouts and cherry tomatoes, and the meatiness from the pancetta. It feels fancy enough for company but also easy enough for a weeknight dinner. You will absolutely love it!

Description

Comfort food has a new name – Pancetta Pasta with Goat Cheese Sauce. A savory pasta dish with crispy pancetta, sweet caramelized brussels sprouts, juicy cherry tomatoes and a creamy goat cheese sauce.


Ingredients

Scale
  • 2 cups of fresh brussel sprouts, halved
  • 1 pint of cherry tomatoes, halved
  • 2 tablespoons of olive oil
  • salt & pepper
  • 4 oz. of cubed pancetta
  • 1 cup of onion, chopped
  • 1 lb of Dreamfields Angel Hair pasta
  • 4 oz. of goat cheese, crumbled
  • 1 cup of reserved pasta cooking liquid

Instructions

  1. Preheat oven to 400.
  2. Spread brussels sprouts and cherry tomatoes on a baking sheet, season with olive oil, salt, & pepper.
  3. Roast for 30 minutes.
  4. Heat a large pot of water to boiling and add angel hair pasta to pot, cook until al dente.
  5. In the meantime, heat a medium saute pan to medium high heat, add pancetta and saute for 4-5 minutes until browned.
  6. Next add onions to pancetta, saute for 4-5 minutes.Set aside.
  7. In a large serving bowl, add angel hair pasta, brussels sprouts, cherry tomatoes, pancetta & onions, goat cheese, and reserved water.
  8. Gently mix until cheese is melted and pasta is all combined.
  9. Serve.

  1. I made this for dinner tonight and it’s absolutel delicious! I didn’t have any Brussel sprouts so I used asparagus and bacon instead of pancetta, and I couldn’t be more impressed! I’m already excited for the leftovers.

    I used to HATE brussel sprouts as a kid! Now I cannot get enough of them. It’s so funny how we change as we age. This pasta dish looks like it was made just for me!

    1. haha.. for real he did. But that was before I knew him. He was blow gun hunting in the jungles of ecuador and while he was down there he ate it. 🙂

    I was pretty much the pickiest kid ever too. LOL. Thank goodness I grew outta all that nonsense and now I’ll gladly eat almost anything! This pasta for example? I seriously want a super huge fork right now to attack that gorgeous mountain of noodles. Those brussels sprouts look caramelized to perfection. So putting this on my dinner menu for next week!
