I mean, I new I was obsessed with Avocado for a while! Who wouldn’t be!? It’s the very best fruit God ever created, hands down! But stuffing an avocado with deliciousness, that is all new to me! And now, I’m in love! So just be prepared for lots of stuffed avocado recipes, just sayin….

I don’t know about you, but my family is all about breakfast for dinner! Pancakes, waffles, scrambled eggs and toast, breakfast burritos, hash & eggs, you name it we are all about it! Especially if there is bacon in it!

On a side note, my four year son can smell bacon cooking from a mile away. He was outside playing when I made these and as soon as he walked in the door…

“BACON!!!! Yummy mommy, whatcha making? Can I have some bacon?”

Like father like son. Ahh.. who am I kidding, I love bacon too!

Baked Eggs in Avocado, ya’ll … is where it’s at!

The KEY is making sure you scoop out about 2 tablespoons of the avocado after you take the seed out. Doing this helps make sure you have a nice “well” or hole for the egg to go into.

I learned this the hard way. I scooped a little out, but as soon as I cracked the egg in the avocado the white part of the egg runneth over! 🙁 Lesson learned. Scoop out more, so you have a nice hole. You can always add the avocado back after the egg is cooked. That is if you don’t eat it before the egg is done. (I may or may not have done that… what? I got hungry!)

Everything about this egg is phenomenal! First off, it’s nestled in an avocado! Then topped with BACON! Enough said! What’s not to love!? I like to drizzle it with some Sriracha sauce for an extra punch of flavor. Sriracha just makes everything better!

This recipe is loaded with protein, fiber, and good fats from the avocado! It takes less than 20 minutes to make and is only 321 calories a serving!

But the BEST part is the taste! Ya’ll, I seriously cannot even describe to you how good this recipe is. You’ll just have to take my word for it and make it! I guarantee you’ll be in love after the first bite!

  • 3 large avocados
  • 6 eggs
  • 4 strips of bacon, diced and cooked till crispy
  • 1/4 cup fresh chives
  • sriracha for drizzle


  1. Preheat oven to 425.
  2. Spray a baking sheet or glass baking pan with cooking spray.
  3. Cut avocados in half. Scoop about an additional 1-2 tablespoons of the avocado to create a well for the eggs.
  4. Place avocados flesh side up on prepared baking sheet or glass pan.
  5. Gently crack one egg in each avocado well, making sure to keep the yoke intact.
  6. Bake for 15-18 minutes, or until eggs are desired temperature. Remove.
  7. Top with crumbled bacon, chopped chives and a drizzle of sriracha.
