Simple Gluten Free Granola made with nuts, quinoa and toasted coconut. This homemade granola is refined sugar free and loaded with tasty goodness. It’s makes the perfect start to your day or mid-day snack!
Well, this recipe was suppose to go out on Monday. But if you watched my instagram story you’d know that I had a horrible migraine from Friday to Monday. The worst part of it was on Sunday when I felt super nauseous. I didn’t have the energy or the stomach to sit in front of the computer to write a post.
So Wednesday it is!
Our family goes through granola like nobody’s business. There are definitely times I buy bags of it when it’s on sale but it’s more because I can’t keep up with the demand at our house.
One of my favorite brand’s of granola is Love Crunch … more specifically the Dark Chocolate & Red Berries kind. So yummy! But incredibly addicting. Don’t say I didn’t warn you.
When I’m not “cheating” and buying granola I’m testing out new ones. And todays recipe is filled with all the goods.
And by “goods”, I mean. Nuts. Seeds. Quinoa and Coconut.
Is anyone else obsessed with toasted coconut or is it just me?
I always find myself picking out the chunks of coconut from a bag. Kinda like I do the rye chips in a bag of Gardettos.
Anywho. Back to the granola.
This bad boy is completely gluten free and is naturally sweetened with maple syrup then warmed up with spices like cinnamon and nutmeg. Once it’s all tossed together this granola goodness is put in the oven and toasted which makes it absolutely delicious!
If you haven’t had toasted quinoa before you’re going to love it. It’s a crunchy treat that’s filled with fiber.
I found myself just snacking on it during the day. After all this granola is just nuts. But beyond just snacking, this granola is great with yogurt and berries. Drizzle a little chocolate on top and you have yourself a tasty dessert!

Description
Simple Gluten Free Granola made with nuts, quinoa and toasted coconut. This homemade granola is refined sugar free and loaded with tasty goodness. It’s makes the perfect start to your day or mid-day snack!
Ingredients
- 1 cup roughly chopped raw almonds
- 1 cup unsweetened coconut flakes
- 1/2 cup roughly chopped raw pecans
- 1/4 cup pepitas
- 1/4 cup dry quinoa
- 1 tablespoon chia seeds
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 cup coconut oil, melted
- 1/3 cup maple syrup
- 1 teaspoons vanilla extract
- 1/4 cup hemp seed
Instructions
- Preheat oven to 325 degrees F.
- Line a baking sheet with parchment paper.
- To large bowl add almonds, coconut flakes, pecans, pepitas, dry quinoa, chia seeds, cinnamon and nutmeg. Stir all the ingredients together.
- To a small bowl add melted coconut oil, maple syrup and vanilla extract. Whisk to combine the oil and maple syrup.
- Pour the wet ingredients over the dry ingredients. Toss everything to coat the dry ingredients with the maple sauce.
- Pour granola mixture on parchment paper lined baking sheet.
- Bake for 30 minutes. Stirring every 10 minutes so the granola doesn’t burn.
- Remove from oven, add hemp seed. Stir together.
- Let cool and store in air tight container.
- Serve.

Yes, yes, PERFECT! I love how this granola is made with quinoa instead of oats. Not that I don’t like oats, but it’s a great change! Would it be okay if I included this recipe in a granola round-up on my page? I would also love to try making it myself!
