Homemade Almond Joy Granola

Ya’ll, yesterday rocked my world! Like for realz.

The crazy thing was, all it took was one word and I was forever changed. What word is that?

Unbelief was the topic we dove into yesterday at study … head on –> crashes guaranteed.

Why did this word rock my world so much?

All my life I have thought of God as faithful. He showed up in my life in so many ways. He healed my parents marriage, he healed my mom of some things she was struggling with, he brought me the best husband ever who perfectly complements me, he has had his hand on my life and guided me every step of the way.

When we miscarried almost two years ago now, I was devastated. But I knew God was faithful, and that he would bring us a baby in his timing. I just needed to wait and be patient. {not my strong suit}

May of 2014 came around and I went to the doctor because it had been a year since he had been trying to get pregnant. They told me that I was not ovulating and recommended that I start taking these nutrient packed vitamins to help level off of the things my body was missing. August came around and nothing changed, but I felt like God was still dealing with my heart. He was asking me to pray for him to “breathe life into me” instead of praying for him to heal my body so I could ovulate. So that started to become my prayer. In September, our church was putting on this all day women’s prayer thing so I decided to go. Usually not my cup of tea, but it was only from 9am-2pm and there was worship so I figured, what the hey. I went in to that meeting expecting God to speak to me about pregnancy, just wanting an answer ya know. And he did! {funny how that happens when you ask}

During the prayer meeting we broke up into some personal prayer time. I took my stuff, went to a corner, laid on the ground (because it was comfortable) and started praying. As I was laying on the ground with my eyes closed I started to have this vision or dream (whatever you want to call it). I saw the ceiling of our church opening up, and a bright white glowing angel was slowly coming down. The angel opened its mouth and put its mouth over my mouth, almost like you would see when someone is giving CPR, and then breathed a breathe of life into me. I immediately shot up from lying down to sitting.

Did he really just do that? Did I really just see that? I had been praying for God to breathe life into me and now I just saw an angel come down and DO IT! I was beyond excited and my faith was soaring. But then …. doubt and unbelief starting to creep in.

What if I choose to believe that he did breathe life into me (literal baby life into me) and it doesn’t happen? I will look like a fool. People will think I’m crazy.  The struggle to believe or not believe was real. I chose to believe, because I had no reason not to. God has delivered in so many ways before why not now!

The end of September came around I had gone into the doctor to have blood drawn, they were testing to see if I had ovulated. While I was on vacation, walking out of Walmart I got a call from the doctor. She said, “I’m sorry, but the test results show that you didn’t ovulate this month.” I grabbed Mike’s hand and just started crying as we were walking through the parking lot. My faith was being put to the test.

Do I believe the things that the world is telling me OR do I believe that God can baffle the wise and allow us to have a baby despite what the medical people say?

I chose to believe that God was bigger. It wasn’t a question, yes of course he can do it!

October came around and there was no baby. My heart was literally broken, not only was there no baby but I felt like God had disappointed me that he had let me down. My faith was shaken, I felt humiliated for believing that it could happen.

So, as a way to “protect myself” I went into defense mode. You know that mode don’t you? I shoved the feelings of wanting to have a baby deep down. I wouldn’t let them come up because it just hurt. I told people that “God had given me peace and if we aren’t meant to have a baby then we are ok with that.” {ahem… lie} I started to believe that yes God was big enough to do anything, but that He just wasn’t willing to do it for me. I started to lose trust and faith in his power and love.

Think of Unbelief or Belief kinda like yeast. When yeast is added to a ball of dough it changes the consistency of everything in the dough to help it rise, it goes into the core of our being and changes the consistency. Not one area is “not affected” by it, just like not one area is not affected by the yeast. It permeates every part of our being.

What would you rather have affecting you, unbelief or belief?

The past couple of months I have been consumed by my unbelief, that God is not big enough to conquer my biggest problem. Here’s the thing, his plan is way better than my wildest dreams. So instead of doubting whether he can do it, why not just jump into the deep end of the pool and watch God pull me out; place me on the highest mountaintop and show me all the amazing things he has for me.

Today I felt a weight lifted off my shoulders because I released that unbelief I had been holding onto. I am ready to receive the things God has for me … doubt free!

I hope you read all the way through, yes I love sharing recipes but I really love sharing my heart! 🙂

As your reward for the long novel of a read I will give you chocolate! hehe.

No really … todays recipe is Homemade Almond Joy Granola. I kinda made this granola recipe thinking of my papajojo (aka my dad) because he is OBSESSED with almond joy lattes. Like literally, he gets one almost every morning on his way to work. So this recipe is for you dad.

The granola in this has a slight maple, cinnamon, and nutmeg hint and is perfectly crunchy. Every once in a while you will get a nice bite of toasted almond and it is amazing. But the best part is when you get the coconut flakes or dark chocolate chunks. When that happens, life is just good. If your anything like my son, you might just start picking those out. But I encourage you to take a full bit to let all the flavors combine together!

Hugs friends! I hope you left with hearts full and tummies hungry to go eat this granola! 🙂

A Jar On its Side Pouring Out Homemade Almond Joy Granola

Homemade Almond Joy Granola

  • Cook Time: 30 mins
  • Total Time: 35 mins
  • Yield: 3-4 cups 1x
  • Category: Breakfast
  • Method: Oven
  • Cuisine: American

This Homemade Almond Joy Granola is made in just 30 minutes! This stuff is like candy – it’s so addicting, you’ll want to eat it every morning for breakfast!

  • 2 cups of old fashioned oats (not quick oats)
  • 1/2 cup of sliced almonds
  • 2 tablespoons of brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon of salt
  • 4 tablespoons of coconut oil, melted (or butter)
  • 1/2 cup of pure maple syrup
  • 1 1/2 teaspoon of vanilla extract
  • 1/3 cup of unsweetened coconut flakes
  • 1/2 cup of dark chocolate chunks (or chocolate chips)

  1. To get started, preheat over to 325º.
  2. In a large bowl, toss old fashioned oats, sliced almonds, brown sugar, ground cinnamon, ground nutmeg, and salt. Set aside.
  3. In a small bowl, mix the wet ingredients, melted coconut oil {or butter}, pure maple syrup, and vanilla extract. Whisk until combined.
  4. Pour wet mixture over dry mixture and toss to coat everything.
  5. On a baking sheet, place either a silicon baking mat or parchment paper. Then spread granola mixture out across entire pan.
  6. Bake for 30 minutes or until granola is slightly browned. {I did 30 minutes and it was perfect} You will want to turn the granola every 10 minutes so it doesn’t burn. 🙂
  7. Remove from oven and let cool.
  8. Mix in the coconut flakes and chocolate chunks when the granola has completely cooled.

Wow! I opened the pin looking for granola but was completely taken by surprise when I read your words. I see myself in your struggle, only mine is lupus and fibromyalgia. I think I’ve done the same thing, making excuses for Him as to why He chooses to not heal me. Defense. I can’t breathe right now but it’s a good thing. He is breathing life back into my faith, thank you for sharing your testimony!

    1. Absolutely! So glad I could encourage you today! That is my heart with this blog! To share my recipes and my heart, which means the good, the bad and the ugly!

  2. Hi, I just made this last night and it’s a huge hit! Thanks for sharing the recipe.
One question though, it turned out to be kind of sticky rather than dry like those store bought granola. Is that normal or have I not done something right along the way? Appreciate your help!

    1. Yeah it does turn out sticky, I like my granola in clumps. But if you’d like it less sticky just decrease the coconut oil and maple syrup.

  3. I realize this comment is pretty late in the game but I just made this granola and it is AMAZING!! My three year old daughter loves it-all of it, oats, almonds and chocolate and I’m happy that she wants it for breakfast instead of sugary cereals! I added the coconut after 20 minutes to roast it for the last 10 minutes and it was perfect! Thanks so much for sharing!

    1. Hurray! It’s always great to find a good homemade healthy option for the kiddos. And this one is definitely delicious, especially with vanilla yogurt. πŸ™‚

  4. So, I already tried several granola recipes and liked them but this one I LOVED. It’s simply astonishing how good this is. I made a few slight adjustments (like using Mascovado sugar, adding 2 Tbsp chia seeds and slightly toasting my coconut) but this is my alltime favorite thing now. Tagged you on instagram if you’d like to see a picture πŸ™‚ thanks for sharing this!

    1. Ohh.. so glad you liked it Svenja! Adding the chia seeds is a great way to sneak in extra nutrients and the toasted coconut! YUM! Thanks for the tag on instagram saw the pic and looks divine! πŸ™‚

Krista, my heart breaks for you that you are still waiting to get pregnant. I’m so glad you are seeing a doctor and getting some help. I just know that baby is going to come to you one way or another. I’m glad that you can find support in your faith. It’s hard to talk about this granola after that, but it looks wonderful!

    1. Thanks Andi. I know it will come eventually, its just the waiting that is hard. We are in a here and now society… patience is not something that comes naturally especially when it comes to getting pregnant! πŸ™‚

Glad you liked the granola too!

Krista, that vision of the bright white glowing angel and breathing life into you is amazing! I am almost in tears. I am so happy for you that you were able to release that unbelief and are ready to receive the things God has for you .. praise the Lord, sister. If I’ve learned anything over the years, it’s that God’s ways are higher and His timing, not always something we want or understand. . but praise the Lord that you are just going to receive the things He has in store for you and just trust. What an amazing post. . thanks so much for sharing this with us. I will be praying for you, Krista!

    1. Thanks so much Alice. I think that is one of the hardest things to do, release and then RECEIVE! Why is it so hard for us to receive things? I mean even compliments its hard to receive at times. So love you sweet friend, thank you for the prayers and encouragement. Means the world Alice!

I was just thinking about you yesterday and wondering how things were going with the baby trying so it’s really odd you wrote this today. Friend… you’ve been in my prayers as I can only imagine how difficult and trying this must be. It’s beyond my wildest dreams. Sometimes it’s hard to see the big picture and then when we get through it and look back we can see what God had intended for us. You will be there someday as hard as it might be right now. Love ya chica πŸ™‚ Oh and delicious recipe too πŸ˜‰

    1. Thanks so much girl I so appreciate your prayers, means so much!! I can’t wait to see the beautiful story God has planned for us as it relates to this baby!

Krista! Thank you so much for sharing your story with me! I have actually prayed for you since meeting in October and you telling me you we’re trying to conceive. I hope God does pour his belief in you as he does have a plan. I hate that we question him and his timing. It is so hard to keep believing when we are so eager to move to the next step, but so many times God holds us back to protect us before we are ready to move forward. I will keep saying prayers for you and just know, God’s timing is always perfect! Love you!

    1. loved that line “but so many times God holds us back to protect us before we are READY to move forward” sooo soo true! Thank you for the prayers sweet friend, so blessed to have met you! Hugs!

wanting a baby so desperately, and not being able to have one, was the hardest thing I have ever had to deal with. I spent SO much time angry with God, not understanding why my plan and His plan were not the same. But in the end, HIS plan is always SO much better. It’s hard when you’re in it, but believing that what was meant to be, will be, put me at peace. Praying for you.
    and this granola…YUM

Oh, Krista! I had no idea you guys were trying to conceive again. I’m sorry to hear of your struggles, but I’m happy to hear about new life being breathed into you! Thanks for sharing your story πŸ™‚ Do you read Espresso & Cream? She has had some scary/ awesome belief come out of her latest pregnancy. She was told the baby was gone, but all we all prayed for her, and 2 days later, it still had a heart beat!
Anyway, I know that place of doubt all too well. With Lent season upon us, I’m trying to fight it down.
Much love and prayers to you guys!
Do you know that I think about you often? I think about how you only gained 12 pounds with your pregnancy because your cravings were salad and healthy food. I miss you!

    1. Thanks Christina, God has a plan for everything and I feel like we can always learn more about ourselves and how we handle things in the hard time. Ya know.. when things are looking good and all rosy life is easy but when things get tough thats when God shows up.

I haven’t heard of her blog but heading over there right now! What a cool story.. I so love that!

Thanks for your prayers sweet friend! I definitely miss you, wish we lived closer! πŸ™‚ Praying for you and that sweet precious girl of yours!!

I’m sorry you have been going through such a difficult time. It’s hard to see God’s plan when it isn’t aligned with your own. I’m excited to see what lies ahead for you- you will rock it, whatever God’s plan is. xoxo And this granola? My family thanks you πŸ™‚

    1. Yes it is! πŸ™‚ But the good thing is I think we learn some of our best lessons in those hard times so I wouldn’t change it for the world. πŸ™‚ I’m excited to see what God has for me too, who knows maybe the next time we see each other I will be pregnant.

Hope you enjoy that granola chica.. hugs!
