Being a mom, and a working mom at that, I am always in need of a quick meal.

I just want to use the ingredients I have on hand and come out with an amazing dish without much effort so I can spend some GOOD quality time with my boys instead of in the kitchen.

My life {and yours} just got a whole lot easier. I found these Campbell’s Sauces at the grocery store and guys!? Minimal ingredients, short prep time, and quick cooking time = you spending less time in the kitchen and more time with your family!

It’s seriously as easy as adding some protein and vegetables and you’re done! You can choose from Campbell’s sauces for the Skillet, Oven, or Slow Cooker.

But today I have an even better one, who doesn’t love a one pot meal? No one! All you have to do is preheat the oven, throw everything together in one pot, put it in the oven, and out comes a delicious finished dish! Um… yes please… said every mom everywhere!

Which is why I have fallen in love with this One Pot Creamy Garlic Butter Baked Chicken & Vegetables recipe. I literally prepped the vegetables the night before, which took 5 minutes, then threw it together the next day before dinner time… 40 minutes later dinner was ready! A combination of roasted vegetables and chicken topped with a creamy garlic butter sauce.

Description

This creamy One Pot Garlic Butter Baked Chicken & Vegetables recipe is super quick and easy to make with just a few ingredients! A healthy meal for the whole family to enjoy.


Ingredients

Scale
  • 1lb. of chicken breasts, boneless
  • 2 large carrots, cut into 1 1/2″ sticks
  • 1 red onion, halved then cut into quarters
  • 1.5 lbs. of fingerling potatoes
  • 8 oz. of fresh French cut green beans
  • 1 red pepper, halved and then cut into quarters
  • 1 orange pepper, halved and then cut into quarters
  • 1 bag of Campbell’s Oven Sauce Creamy Garlic Butter Chicken

Instructions

  1. Preheat oven to 400.
  2. Place chicken in a 13×9″ baking dish. Arrange potatoes, green beans, red onion, red pepper, orange pepper, and carrots around chicken.
  3. Pour sauce evenly over chicken and vegetables.
  4. Bake for 40 minutes, or until chicken is cooked through to 165 degrees.
  5. Remove from oven.
  6. Stir sauce chicken and vegetables before serving.

  1. I have never tried these before but I plan on it! I would use Sweet Teriyaki Chicken for a simple stir-fry w/ white rice!






  2. I was impressed by how natural the ingredients are for these sauces and that they actually do have some that are vegetarian, even though they only promote them to meat-eaters. I would use any of the veggie ones to make a vegetarian dish using fake meats and veggies.

    I like to make chicken teriyaki with rice and dumplings, and Campbell’s makes this easier.

    I would use the sauce in the crockpot with some chicken tenders and then just put it over top of white rice. We don’t like a lot of stuff in our meals. My husband won’t eat any veggie except corn and if I put it in a casserole he wouldn’t eat that.

  25. Generally I like to use convenience foods to help me get unusual flavors into my cooking, but I love that these Campbell’s Oven Sauces are in complete comfort-food flavors.     I find these totally perfect for when I don’t have all day to cook. All I have to do is saute some chicken strips or sliced pork or beef – and voila! Dinner! Nice sauces that I can quickly doctor up to my liking, that don’t cost an arm & a leg, that I can add virtually ANYTHING to, that have ingredients that aren’t likely to show up in the next “causes cancer” list, and can sit in my pantry…ready & waiting for my next dinner time dilemma.
