Grilled Prosciutto Peach Flatbread Pizza

A couple months ago, Mike and I attended this fun cooking event that was hosted at a Kitchen, Bath and Lighting Showroom. A catering company created the menu for the event but we did all the work… a.k.a. the chopping, stirring, and cooking. The only thing we didn’t do was the actual “assemble” of the dishes.

Have you ever been to an event like that? What about a cooking class?

If not, I highly recommend it. Not only is it fun but you can learn a few things along the way! It’s where I learned that instead of adding more salt to a dish, you can actually just add some fresh lemon juice and the citrus enhances the salt flavor so you keep the sodium down!

PS I totally use that trick all the time, especially on steak or in pasta dishes!

Any who, the reason I told you about that cooking event is because todays recipe was inspired by that event! We made a flatbread that was topped with nectarines, prosciutto, and ricotta cheese. It was absolutely delicious!

So of course I needed to make something similar at home.

And since I’ve dove head first into summer recipes here at JHE we’re throwing this flatbread on the grill NOT the oven! DUH!!!

Tips for Making Flatbread Pizzas

When it comes to flatbreads I love cheating and using Naan bread. It’s quick, easy, and delicious and WAY easier than making it on my own. And right now, I need all the “easy” I can get!

Naan bread is kinda floppy when you first take it out of the package. So in order to “firm” it up a bit before transforming it into a fantastic pizza you need to grill it a bit first. I threw mine on the grill for 2-3 minutes just to get slight char marks then flipped it and loaded it with the goods!

Grilled Prosciutto Peach Flatbread Pizza

Filled with with peaches, prosciutto, goat cheese and fresh basil, this Grilled Prosciutto Peach Flatbread Pizza is the ultimate summer grilling recipe. Plus, it’s made in just 30 minutes!

Ingredients

  • 4 naan whole wheat flatbreads
  • 4 tablespoons olive oil
  • 4 garlic cloves, minced
  • 4 fresh peaches, sliced
  • 3 oz. prosciutto, torn or sliced into 1” pieces
  • 4 oz. goat cheese, crumbled
  • 1/2 cup fresh basil, chiffon

Instructions

  1. Preheat grill to medium high heat.
  2. Place flatbreads on grill. Grill for 2-3 minutes, until there are slight char marks.
  3. Remove from grill.
  4. On the side that is charred, drizzle 2 tablespoons of olive oil. Evenly spread minced garlic, sliced peaches, prosciutto, and goat cheese among the four flatbreads.
  5. Place flatbread back on grill. Grill for 4-6 minutes, until cheese is slightly melted or soft and the bottom of the pizza has char marks.
  6. Remove from grill.
  7. Drizzle with remaining 2 tablespoons of olive and sprinkle with fresh basil.
  8. Slice and serve!
