Why These Air Fryer Zucchini Chips Are My Favorite
There are so many ways to do zucchini chips and I’ve probably tried them all over the years, but the air fryer has become my go-to. Here’s why I love this recipe—and why you will too!
- Crisped to perfection. Because ovens tend to have hot spots (and cool spots), I’ve always had trouble getting an entire pan of zucchini chips to be equally crispy without some that are burnt and some that are still soft. The air fryer does a better job of evenly crisping zucchini chips! (It does the same with these Crispy Healthy Air Fryer Zucchini Fries.)
- Awesome flavor. Garlic powder adds savory garlic goodness without the sharp bite of fresh garlic, and the Parmesan makes these zucchini chips cheesy and delicious. You can’t go wrong!
- Versatile. Make these for a quick afternoon snack, serve them as a party appetizer with marinara for dipping, or make them a side dish for some Italian Cheeseburgers.

What You’ll Need
You only need a short list of ingredients to make zucchini chips in the air fryer! Scroll down to the recipe card to find the ingredient quantities and recipe instructions.
- Zucchini – Yes, yellow squash works too! I like using medium zucchini (or squash) for the best flavor and smaller seeds.
- Grated Parmesan – Grate your own from a block for better melt and flavor.
- Olive oil – Olive oil helps the zucchini chips get crispy and the seasonings will stick better.
- Seasonings – Garlic powder, salt, and ground pepper.
How to Make Zucchini Chips in the Air Fryer
It’s easy! Here’s what you’ll need to do.



- Prepare. Preheat your air fryer to 400ºF. Line a baking sheet with paper towels, then arrange the sliced zucchini on top in a single layer. Season with salt and let sit for 10 minutes.
- Season the zucchini. Pat the zucchini dry, then toss with the oil and seasonings.
- Air fry. Place the zucchini in a single layer in the air fryer basket. (You’ll need to make multiple batches.) Sprinkle Parmesan cheese on top, then air fry for 8 to 10 minutes, or until the chips are crispy and the cheese is lightly browned.
Tips and Variations
These additional pointers will help you make the perfect air fried zucchini chips!
- Cut the zucchini thinly and uniformly. The thinner the slices, the crispier your chips will be! It’s also important to make sure the slices are all the same thickness so your chips are done cooking at the same time. A mandoline slicer can help with this.
- Don’t crowd the zucchini. It’s totally fine if the edges of the chips are touching each other, but don’t overlap or stack them. They need room for the air to circulate so they get crispy!
- Try other flavors. Add Italian seasoning instead of or in addition to the garlic powder, leave out the Parm and make your zucchini chips with taco seasoning, or use other herbs, spices, and seasoning blends you have on hand.

What to Serve With Air Fryer Zucchini Chips
If I’m making these as a side, I’ll serve them with burgers (like my Portobello Burgers!) or sandwiches (hello, Grilled Chicken Sandwich!). As an appetizer, they’re great with marinara or Bread Dipping Oil; they’re not good for scooping up dips, but they’re excellent for pairing with sauces and dressings.
How to Store Leftovers
- Room temperature: These air fryer zucchini chips are best enjoyed right away, but if you have extras, let them cool completely and store them in an airtight container for 3 to 4 days. As long as the cheese is browned and the zucchini is completely dried out, the chips are fine to keep at room temperature. (If not, just store them in the fridge.)
- To reheat: You can eat the chips without reheating, or warm them up in the air fryer. This will help re-crisp them a bit too!

Instructions
- Preheat oven to 400°F.
- Place a paper towel on a baking sheet and lay zucchini chips on top. Lightly season with salt and let sit for 5-10 minutes to draw moisture out of the zucchini.
- Pat zucchini dry and add to a medium bowl. Season with olive oil, garlic powder, salt and black pepper. Gently toss to coat the zucchini chips.
- Place zucchini chips in the air fryer basket in a single. Top each zucchini chip with a little bit of parmesan cheese.
- Cook for 8-10 minutes until cheese is slightly browned.
- Repeat this process until all zucchini chips are cooked.
- Serve.

I prepared this recipe using a shallow jelly roll pan.
Left them baking overtime, and they are still mush. UGH
What did I do wrong?
Baking them over time is probably where you went wrong, it probably turned the flesh insides to mush when you overcooked them. I almost undercook them to keep that crunchy texture. 🙂 Hope that helps MaryJane!
