Vegan No Bake Chocolate Brownie Energy Balls

Easy No Bake Energy Balls Recipe

Wow. This new year has definitely started out with a bang. But not the kind I necessarily wanted to have.

Mike has an eye infection and I just took Maddie to Urgent Care yesterday and she was diagnosed with RSV and an ear infection. She had an ear infection about 2 weeks ago but apparently the medicine they gave her didn’t work because it’s still there. (ugh. sigh)

If I’m being honest, I’m kind of an emotional basket case when my people are not feeling well. I strive and strive to do everything to help make them feel better. Therefore exhausting myself, but also stressing myself out as I rack my brain for things to “fix my people.”

All that to say, my mind is a little distracted right now as I write this post.

But alas, it’s the new year so I knew I needed to pull it together and get something up. After all, it is the busiest time of year for me!

So, in order to kick start the new year off right I thought a protein ball recipe was a must. Especially as you workout! You need to make sure you are fueling those muscles!

How to make protein energy balls?

  1. To a food processor add oats (use gluten free oats if you have a gluten intolerance), ground flaxseed, cinnamon, dry dates, almond butter or peanut butter and protein powder.
  2. Pulse the food processor 5-7 times until oats and dates are finely chopped.
  3. Add water to the food processor. Continue to pulse mixture until it forms of a ball or dough like consistency.
  4. Transfer mixture to a large bowl, add chocolate chips if desired. Roll mixture into 1″ balls using your hands.

When making “protein” energy balls, most people will add protein powder for an extra boost of protein. However, if you want to omit the protein powder you can. There will be protein in the almond butter or peanut butter as well as a few of the other ingredients in the energy balls.

How to Make Energy Balls Stick Together:

Slowly add water to the energy ball dough. Mix it with a food processor or with your hands, the water helps the energy balls stick together.

How to Store Energy Balls:

Store energy balls in an air tight container in the refrigerator for up to 1 week. If freezing energy balls, store in a freezer safe bag in the freezer for up to 3 months.

Description

No Bake Chocolate Brownie Energy Balls with less than 10 ingredients. These healthy energy bites are vegan, gluten free and make the perfect quick breakfast or high protein snack.


Ingredients

Scale
  • 2 cups gluten free oats
  • 1/2 cup dry pitted dates
  • 1/2 cup ground flax seed
  • 1/4 cup almond butter
  • 1/4 cup cacao powder
  • 1 scoop burt’s bee chocolate protein powder (or other pea protein based protein powder)
  • 1 teaspoon cinnamon
  • 3/4 cup water
  • 1/3 cup dark chocolate chips (for vegan option use Enjoy Life brand)

Instructions

  1. Add rolled oats, ground flax seed, cacao powder, cinnamon, dried dates, almond butter, and chocolate protein powder to food processor.
  2. Pulse until ingredients are blended and oats are finely chopped, almost like flour consistency. (about 7-9 times)
  3. Slowly add water to the food process and blend until the mixture sticks together. You may need to add more or less water depending on your energy ball dough.
  4. Add mixture to a large bowl, using your hands mix in chocolate chips.
  5. Form energy bite mixture into 1″ balls and place on parchment paper lined baking sheet.
  6. Serve immediately or store in air tight container in refrigerator.
