Now … I know, normally the start of the week … aka Monday might not always be the most exciting and invigorating day. After all, the relaxation and joy of the weekend is over and Monday means “back to life, back to reality.” Morning traffic, stressful work deadlines, evening traffic, go to bed and then do it all over again… for four more days! Bahumbug!
But today, I am giving you a break! Today I’ve got something that will turn your Monday frown up side down!

Covered in fresh grated or shaved Parmesan cheese and garlic powder these zucchini chips are baked in the oven until the cheese starts to bubble and turn a light brown color.
The smell from the garlic and Parmesan will start to permeate the rest of your house and as soon as you pull that baking sheet out of the oven I KNOW you will have a hard time waiting till they cool down. Description
These quick and easy air fryer zucchini chips have a crispy texture and garlic Parmesan flavor that makes them totally irresistible!
Ingredients
- 2 zucchini, 1/8″ slices
- 1/2 cup fresh grated parmesan
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
Instructions
- Preheat oven to 400°F.
- Place a paper towel on a baking sheet and lay zucchini chips on top. Lightly season with salt and let sit for 5-10 minutes to draw moisture out of the zucchini.
- Pat zucchini dry and add to a medium bowl. Season with olive oil, garlic powder, salt and black pepper. Gently toss to coat the zucchini chips.
- Place zucchini chips in the air fryer basket in a single. Top each zucchini chip with a little bit of parmesan cheese.
- Cook for 8-10 minutes until cheese is slightly browned.
- Repeat this process until all zucchini chips are cooked.
- Serve.
