A 15 Minute way to make Spaghetti Squash that you will fall in love with, Parmesan Herb Microwave Spaghetti Squash. It’s as easy as 1,2, … it needs to be on your table this holiday season!
I’ve decided that Tuesdays are now my favorite day.
It’s the one day of the week where I don’t have anything on my to-do list. Even Sunday’s have turned into a create-as-many-recipes-as-I-can-and-shoot-them-all-in-the-same-day-then-do-all-of-the-laundry-and-dishes kinda day! Not restful!
Tuesdays I have no errands, no mommy’s day out to take Cason too, no blog post to promote – absolutely nothing!
Which means it’s just me and little man and we can do whatever we want! Yesterday we woke up late, ahem.. that’s 7am for you non-parents, stayed in our PJ’s, made some oatmeal, talked, and watched a little Paw Patrol (Cason’s current favorite show). After that we decided it was a good day to go to the park, feed the ducks and then climb some rock walls – so we did it! Then we headed to the gym, I got a workout in and Cason had round 2 at the playground … always a good thing.
Then we each had our own “play time” at home, Cason played in his room while I played in the kitchen (my rest/refresh time… hehe) and then we played airplane and built a huge train track the size of our living room. So much fun!
I think Tuesdays are my favorite because I feel like I can really be intentional with Cason on those days. Instead of running from place to place and then fitting in a 15 minute play time with him, ya know. I want him to remember me on the floor playing cars or trains with him, not me dragging him from place to place or seeing me on the computer or phone. So… yeah for Tuesdays (even though it’s a Wednesday)
Ok, onto the recipe for today, this Parmesan Herb Microwave Spaghetti Squash!
The first time I ever made Spaghetti Squash I was totally turned off my the long cook time. I’m not a fan of recipes that take longer than an hour unless it’s in the crock pot! The squash seemed to take For-EVA in the oven and even when I finally took it out because I couldn’t take it any more it still wasn’t done so I had to put it back it!
Enough of that drama. So I thought to myself.
There has to be a better way…
Well there is. It’s called the Microwave! When in doubt, microwave it! 🙂 Guys it worked like a charm. I placed the Spaghetti Squash flesh side down in a baking dish, filled it up with about an inch of water and cooked it for 10-15 minutes. BOOM! It’s done! Easiest thing ever! But it gets better than that, the toppings are just fresh parmesan, fresh basil, and olive oil!
Um.. literally takes 15 minutes! It’s amazing and will be a perfect change up side dish for your holiday meals. Plus you will be able to blow your friends mind with the new cooking method!

- Serves: 6
- Serving size: ⅓ cup
- Calories: 141

- 1 spaghetti squash, halved and seeds removed
- 1 cup shredded parmesan cheese
- ½ cup fresh basil, chiffoned (thinly sliced)
- 2 tablespoons olive oil
- ½ teaspoon garlic powder
- ¼ teaspoon ground pepper
- salt to taste
- Place the prepared spaghetti squash flesh side down in a 13x9 glass baking dish.
- Fill the dish with about 1" of water.
- Place baking dish in the microwave and cook for 10-15 minutes, until squash is tender.
- Remove the spaghetti squash from the pan. Using a fork, gently scrap the inside of the squash to create spaghetti like pieces of squash.
- Place spaghetti squash in a bowl with parmesan cheese, fresh basil, olive oil, garlic powder, ground pepper, and salt to taste. Toss to combine and serve!
