So … basically I’m feeling like an emotional wreck! Do you ever have days like that or am I alone?

I have to say its not my fault though. I’m on these pills to get me preggers and they basically trick my body into producing more estrogen. But still… its definitely sucks to feel like you’re not “in control” of your emotions.

I’m just feeling super irritable one minute and then the next I want to cry. Super normal right?!? {crying in the corner}

So all in all.. I’m a real buddle of joy. {sorry hubbie :)}

Anywho, this morning on the way to work I was crying in the car.

What you don’t cry on the way to work? Pppff .. weirdo!

A song came on and the lyrics just hit me to the core:

With all the crazy stuff that has been going on this past year I know that He still holds me in the palm of his hand. Even though sometimes the world feels like its caving in on me, he still whispers to me “I’m here.”  Such HOPE instead of a feeling of despair.

Towards the end of the song I just found myself fist pumping in the car and believing…  I’M AN OVERCOMER! 🙂

This Chicken Feta Walnut Grape Chopped Salad will definitely overcome any issues or dislike of “rabbit food” aka Salad that you might have.

My husband now claims that this is hands down his favorite salad recipe that I’ve made. Which is funny because the last salad I made thats what he said.  So either he has short term memory loss or… I am just that amazing of a cook and just keep out doing myself. bahaha… 🙂

But for real! This salad has everything you want in a salad. Vegetables, fruit, protein, dairy, nuts, and a tangy sweet vinaigrette. Basically .. its gonna rock your socks off and you need to go make it now!

Chicken Feta Walnut Grape Chopped Salad with Balsamic Vinaigrette

Description

This healthy Chicken Feta Walnut Grape Chopped Salad is topped with a homemade balsamic vinaigrette. It’s easy to make and packed with flavor!


Ingredients

Scale
  • 10 oz. of fresh spinach
  • 3/4 cup of walnuts
  • 1 cup of black or red grapes, halved
  • 3/4 cup of granny smith apples, diced
  • 3/4 cup of crumbled feta cheese
  • 1 cooked chicken breast, diced

Balsamic Vinaigrette:

  • 2 tablespoon of mustard
  • 1 1/2 tablespoon of honey
  • 1 teaspoon dry basil
  • 1/4 cup of balsamic vinegar
  • 1/2 cup of olive oil
  • salt & pepper

Instructions

  1. In a small bowl, mix together mustard, balsamic vinegar, dry basil, honey, salt & pepper. Slowly add in olive oil. Mix until emulsified {thick and you can’t see the oil & vinegar separation}
  2. In a large salad bowl, add spinach, walnuts, grapes, chicken, and feta cheese.
  3. Serve with dressing on the side. 🙂

    Girl, you ARE an overcomer!! You must be a “K-Love” fan!! (or is that just a local radio station, I’m not sure…..) Anyway, hang in there, there is light at the end of the tunnel! Take this salad for instance!!! This looks like a real pick-me-upper. It looks so fresh, juicy and good-for-you-yummy!!! I am all over it! 🙂 🙂

    I’m a huge fan of apples in salad so this sounds so delicious! And hang in there… Estrogen and hormones do crazy things! I haven’t been myself in 3 years due to having two kids and breastfeeding. I can’t wait to feel like a normal rational person again!

    I remember when I was in the hospital last fall and was on about 50 pain medications, NO control of my emotions. Cried or flipped out over the littlest, craziest things. My husband must have thought I was a real peach! You are such an amazing woman Krista, don’t let those emotional days get you down, something good will come out of it in the end. This salad is all sorts of wonderful and I will definitely be making it for dinner next week! Love the photos!
