The Best Steak Salad

When I moved down to Texas twelve years ago (holy crap that is a long time ago), one of the first places my new found friends had to take me to Saltgrass Steakhouse. It’s like a right of passage to be a ‘true texas’ …. steak! It is basically one of the best Steakhouses down here (for your money that is)! 

After looking at their amazing menu for quite a while, I finally decided on their SteakHouse Salad with a side of their Loaded Creamy Potato Soup.

I know, I know! “You’re at a Steak House! Why didn’t you order a big juicy Steak?”

Well, technically, I did order Steak. wink wink

I just ordered it on top of a hearty salad that was filled with all kinds of veggies, nuts, and gorgonzola cheese. But the kicker to this incredible salad, past the tender juicy steak, was the balsamic vinaigrette they served with it. 

Whenever, I order a salad I almost always ask for my dressing on the side. I find that I use way less dressing when I get it on the side and I don’t end up with a salad that is drowning because the cook doesn’t know how to correctly portion control. With that being said this dressing … y’all I seriously ate the whole thing and then some. It compliments every part of the salad perfectly. Today’s salad is inspired by that famous Steak Salad I first tried years ago!

So, it’s time to answer those questions.

What is the Best Steak for Steak Salad?

The best cuts of steak to use on a salad are flank steak, top sirloin steak, ribeye or even filet mignon (if you want a little more flavor). Flank steak will give you more bang for you buck if you’re trying to feed a crowd but the ribeye or filet mignon will be more flavorful.

I tend to lean more towards the Filet Mignon or Ribeye because I like the tenderness and flavor you get from that cut. But if I have a bunch of people over I’m gonna use the flank steak to make it stretch.

Add In Ideas:

  1. Steak (duh): refer to above for best cuts of meat for a steak salad
  2. Greens: spring mix, spinach, romaine, arugula and kale.
  3. Vegetables: green beans, parboiled potato, roasted red pepper, tomatoes, roasted beets, sliced onion, chickpeas, grilled corn, asparagus or avocado.
  4. The Extras: nuts, goat cheese, gorgonzola cheese, bacon or eggs.
  5. Dressing: cilantro dressing, balsamic dressing, honey dijon dressing or blue cheese dressing.

Honestly the options are limitless. 

Steak Salad Variations:

  1. California Steak Steak – with this salad you’re gonna think you’re in California! Everything is light and grilled and served a bed of arugula with a zesty Chimichurri dressing
  2. Roasted Beet Steak Salad– a twist on the classic roasted beet salad with goat cheese, pecans, carrots and edamame all topped with steak and a balsamic dressing.
  3. Thai Steak Salad with Peanut Dressing – this one has mango, napa cabbage, cucumbers, fresh mint, red pepper and that dressing… it’s incredible!
  4. Southwestern Steak Salad – all those tex-mex flavors you love like corn, black beans, bell pepper and avocado and drizzled with an incredible avocado cilantro dressing.
  5. Harvest Steak Salad with Apple Cider Vinaigrette – filled with fall veggies like sweet potatoes, brussels sprouts, sliced apple and cranberries then topped with an apple cider vinaigrette.

Ok, now that your loaded with Steak Salad ammunition you better get to cooking. I highly recommend you start with this classic because it’s epic and then go from there.

The Ultimate Ribeye Steak Salad with Balsamic Dressing

Description

The Ultimate Ribeye Steak Salad made “steakhouse style.” Filled with green beans, hardboiled eggs, goat cheese and drizzled with a Balsamic Vinaigrette. This classic steak salad makes the perfect dinner and is done in 30 minutes!

Ingredients

  • 1 ribeye steak
  • salt & pepper to season steak
  • 5 cups fresh baby spinach
  • 2 eggs, hardboiled
  • 1 cup of fresh green beans, cut into 1” pieces
  • 1 pint of cherry tomatoes, halved
  • 1/4 cup of raw walnuts or pecans
  • 2 oz. of crumbled goat cheese

Balsamic Vinaigrette:

  • 2 tablespoons of dijon mustard {gluten-free}
  • 1 garlic clove, minced
  • 1 teaspoon of dry basil
  • 3 tablespoons of balsamic vinegar
  • 3 tablespoons cup of olive oil
  • salt & pepper to taste

Instructions

  1. Heat grill to medium high heat.
  2. Season ribeye with salt and pepper on both sides.
  3. Place ribeye on grill and cook each side for 5-6 minutes.
  4. Remove from grill and let sit, do not cut until you are ready to assemble salad.
  5. Make the balsamic vinaigrette, add dijon mustard, garlic clove, dry basil, balsamic vinegar, olive oil, salt, and pepper to a bowl and whisk until combined. {sometimes I just put everything in a mason jar and shake} Set aside.
  6. Next, bring a small pot of water to a boil.
  7. Add fresh green beans cut to pot. Cook for 2-3 minutes and immediately throw in an ice bath to shock them and stop the cooking process. {this is called “blanching”}
  8. To assemble salad, pull out 4 large dishes and evenly distribute chopped romaine romaine, hardboiled eggs, cherry tomatoes, fresh green beans, walnuts or pecans, crumbled goat cheese, and chopped ribeye.
  9. Serve with homemade balsamic vinaigrette.
