Easy 30-Minute 

with cinnamon streusel

1. Preheat

Heat oven  to 350ºF.

2. Combine Dry Ingredients

Mix the flour, brown sugar, pumpkin pie spice, baking soda, baking powder, and salt in a large bowl.

3. Combine Wet Ingredients

Add the pumpkin puree, vanilla extract, eggs, and coconut oil to a medium-sized bowl and whisk together.

4. Add Togehter

Add the wet ingredient mixture to the combined dry ingredients and mix until completely combined.

5. Pour Into Pan

Grease a 12-count muffin tin with PAM and fill the cups 3/4 of the way full with batter.

6. Make Streusel

Combine the flour, brown sugar, cinnamon, chopped pecans, and coconut oil in a medium-sized bowl. Top each muffin with a scoop of streusel.

7. Preheat

Bake for about 25 minutes or until a toothpick inserted into the center comes out dry.

8. Let Cool

Allow muffins to cool in the pan for a few minutes before transferring to a wire rack.
