Description

Spicy Roasted Tomato Guacamole is made with roasted cherry tomatoes and jalapeños, then infused with citrus juice. It’s topped with salty queso fresco for the ultimate Guacamole spread!


Ingredients

Scale
  • 4 avocados, mashed
  • 1/3 cup of roasted cherry tomatoes
  • 1/4 cup of red onion, diced
  • 1 jalapeño, roasted {only use 1/2 of it, use more if you like it spicy}
  • 1 garlic clove, minced
  • lime juice
  • juice of half an orange
  • salt & pepper

Instructions

  1. Preheat oven to 400º.
  2. Roast cherry tomatoes and whole jalapeño for 20 minutes.
  3. Remove from oven and let sit until cool. Remove seeds from jalapeño and dice up half of the jalapeño. Set aside.
  4. In a bowl, add roasted cherry tomatoes, diced jalapeños, diced red onions, and minced garlic clove.
  5. Mash up avocados and put in bowl with the rest of the vegetables.
  6. Add lime juice, juice from half an orange, salt and pepper.
  7. Mix together and serve!
  8. {optional: top with crumbled queso fresco}
