Pico de Gallo – Fresh Salsa

Ingredients

  • 8 tomatoes, de-seeded and diced
  • 1/4 cup of red onion, finely diced
  • 1 red bell pepper, diced
  • 1/4 cup of fresh cilantro, chopped
  • 1 jalapeno, de-seeded and diced
  • juice of 2 limes
  • 1 garlic clove, minced
  • 1 large chipotle pepper, minced {from a can of chipotle peppers in adobe sauce}
  • salt & pepper

Instructions

  1. Add diced tomatoes, diced red onion, diced red bell pepper, diced jalapeƱo, minced garlic clove, chopped cilantro, minced chipotle pepper in a bowl.
  2. Top off with juice of 1 lime and salt & pepper to taste.
  3. Serve with tortillas or along side a yummy Mexican inspired dish…. like my Chicken Enchiladas with Creamy Tomatillo Sauce.
