Paleo Banana Bread

Ingredients

  • 2 cups of almond flour
  • 1 T. cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. baking soda
  • 2 eggs
  • 1/2 water
  • 1 tsp. almond extract
  • 1/4 cup of honey
  • 2 ripe bananas, mashed

Instructions

  1. Preheat oven to 350°. Spray loaf pan with cooking spray. Mix together almond flour, ground cinnamon, nutmeg, and baking soda in a bowl.
  2. Beat two eggs in a bowl, then add water, almond extract, honey, and mashed bananas. Mix well.
  3. Add banana mixture to almond flour mixture; mix until no dry areas are visible. Pour batter into the prepared loaf pan. Bake until brown and crisp around the edges, about 45-50 minutes.
