Description

These Whole Wheat Lemon Blueberry Waffles are filled with juicy blueberries and fresh lemon zest. They’re a great breakfast or brunch that your whole family will love!


Ingredients

Scale
  • 1 cup of all purpose flour
  • 1 cup of whole wheat flour
  • 1 1/2 cups of 2% milk
  • 2 eggs, separated
  • 1 teaspoon of vanilla extract
  • 3/4 teaspoon of almond extract
  • 3 tablespoons of sugar
  • zest of one lemon
  • 2 teaspoons of baking powder
  • 1/4 teaspoon of fine sea salt
  • 1 stick unsalted butter, melted
  • 1/2 cup of fresh blueberries
  • PAM for spraying

Instructions

  1. Preheat waffle maker, and spray griddle with PAM cooking spray.
  2. In a medium bowl, beat egg whites using a hand mixer until soft fluffy peaks form. {the egg whites will slightly stick to the whisk when you pull it away} Set aside.
  3. In a large bowl, mix egg yolks, sugar, vanilla extract, almond extract, lemon zest, and milk.
  4. Add in dry ingredients, all purpose flour, whole wheat flour, baking powder, and sea salt. Mix until dry ingredients are mixed with wet ingredients.
  5. Fold in the melted butter, fresh blueberries, and fluffy egg whites until completely mixed.
  6. Pour in 1/2-3/4 cup of batter into greased waffle maker and cook until golden brown, about 3-4 minutes.
  7. Serve with fresh blueberries and maple syrup or honey.
