The Best Stuffed Acorn Squash

1. Preheat

Heat oven  to 375ºF.

2. Prep Your Squash

Drizzle the flesh side of acorn squash with oil and season with salt.

3. Bake

Lay squash flat side down on a baking sheet. Bake for 30- 45 minutes, depending on thickness of the squash. Once cooked, remove and turn oven to broil.

4. Brown the Sausage

To a large skillet, add sausage. Break up with a wooden spoon and cook until sausage is browned. 

5. Make the Stuffing

Add onion & diced apple. Saute for 3-4 minutes. Next, add spinach & fresh thyme. Saute until spinach is wilted, stirring throughout. Finish with parmesan cheese. Toss to mix everything together.

6. Stuff Squash

Stuff acorn squash with apple sausage mixture. 1. Place under broiler for 5 minutes, until sausage is browned.

7. Garnish

Garnish with chopped parsley and pomegranate arils.

8. Cooking Tip

The best way to cut an acorn squash is to slice it in half, through the stem. Scoop the seeds out and you are ready to cook them.
