Place sliced sweet potatoes in a large bowl. Add oil and toss until completely coated.
Grill the sweet potatoes for 4 minutes on each side. Set aside. Char green onions by grilling on each side 2-3 minutes. Remove.
Once removed from the grill. Roughly chop them and set them aside.
Add chopped onions, bacon and grilled potatoes to a large bowl. Mix everything together.
Add dressing ingredients to a small bowl. Whisk until well combined.
Drizzle the dressing over the sweet potatoes and gently toss to coat all the sweet potatoes.
This grilled sweet potato salad is best served warm, but it’s also quite good when served cold. Give it a go! Both ways are amazing.
