This Croissant Breakfast Casserole has become a staple morning meal in our house. And here’s why: it's a one-stop shop meal, ready in 1 hour, and it feeds a crowd!

1. Pre-Heat

Preheat oven to 350°F.

2. Make Egg Mixture

To a medium bowl add eggs, milk, dijon mustard, garlic, salt and pepper. Whisk to combine and set aside.

3. Brown Sausage

Heat a large skillet to medium high heat. Add sausage and cook until browned, breaking the sausage up throughout the cooking process. Remove sausage from the pan and place on the bottom of a 13″x9″ baking dish.

4. Caramelize Onions

To the same hot skillet add butter & onions. Cook until onions are caramelized, about 5 minutes. Layer the onions over the sausage, spreading out evenly in the dish.

5. Add Layers

Next, add red pepper and 1/2 cup of cheddar cheese.

6. Add Egg Mixture

Pour the egg mixture over the sausage. Give the dish a gentle shake to make sure everything spreads evenly.

7. Top It Off

Top with torn croissant pieces and finish with remaining cheese.

8. Cover & Bake

Cover the baking dish with tinfoil and bake for 30 minutes. Remove the tinfoil and bake for an additional 5 -10 minutes. You want the inside mostly firm when you give the pan a quick jiggle test.

9. Rest, Garnish, and Serve

Remove from oven and let rest for 5 minutes before serving. Garnish with green onions or parsley.
