Description

This quick and easy Vanilla Chia Strawberry Jam recipe is naturally sweetened with honey. You’ll want to slather this jam on everything, plus it’s a perfect recipe for strawberry season! (no pectin)

Ingredients

  • 4 cups sliced fresh strawberries
  • 1/2 cup water
  • 2 tablespoons honey
  • 2 tablespoons of chia seed
  • 1 tablespoon lemon juice
  • 2 teaspoons vanilla paste
  • pinch of salt

Instructions

  1. Add strawberries, water, honey, chia seeds, lemon juice, vanilla paste, and a pinch of salt to a small saucepan. Stir.
  2. Turn heat on to medium. Bring mixture to a boil.
  3. Reduce heat to simmer and stir on occasion for 15-20 minutes.The strawberries will deflate and the sauce will thicken.
  4. Remove the jam from heat. Place in an air tight container in the refrigerator for storage.
