Description

A Fresh Marinated Tomato Salad made with ripe cherry tomatoes, red wine vinegar, onions and fresh herbs for the perfect summery bite. The best summer staple – it’s great on its own, as an appetizer or topper for chicken, bread or salad! 


Ingredients

Scale
  • 4 cups of cherry tomatoes, halved
  • 3 tablespoons red onion, finely diced
  • 1 clove garlic, minced
  • 3 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • salt to taste

Instructions

  1. Add tomatoes, onions and fresh herbs to a medium bowl. Toss to mix everything together.
  2. To a small bowl, red wine vinegar, olive oil and salt. Whisk together until smooth. Pour mixture over tomato mixture.
  3. Cover and store in the refrigerator. Let sit for at least 10 minutes for all the flavors to soak together. Better if overnight.
  4. Serve.
