  • 1 yellow pepper
  • 1 tablespoon fresh cilantro

Instructions

  1. To make the Spice Blend: in a small bowl add smoked paprika, garlic powder, sea salt, ancho chili powder, ground cumin, and black pepper.
  2. Season Patties: Place formed burger patties on a plate or baking sheet. Using the spice blend, season one side of the burger and let sit.
  3. Make Spicy Mayo: To a small bowl add mayo, chipotle pepper, smoked paprika, garlic powder, and lime juice. Stir until combined. Set aside.
  4. Make Avocado Mash: Add avocado to a bowl, mash with a fork until smooth, mix in lime juice, garlic powder, and salt until combined. Set aside.
  5. Heat Grill: Preheat grill to medium high heat.
  6. Make Pineapple Pepper Relish: Place whole peppers on the grill. Grill each side for 3-4 minutes, until there is a slight char on each side. Remove and let sit for 3-4 minutes. Cut off top, remove the seeds and dice into small pieces. Add diced peppers, pineapple, fresh cilantro, lime juice, and salt to a bowl. Toss to combine everything. Set aside.
  7. Grill Burges: Place seasoned burger patties on grill. Grill each side for 4-5 minutes and remove. Toast the buns.
