The Best Instant Pot Cilantro Lime Rice

This is the Best Instant Pot Cilantro Lime Rice recipe ever! An easy side dish that uses simple ingredients and is done in less than 20 minutes leaving you with flavorful fluffy rice every time.



  • 2 cups long grain white rice
  •  1 tablespoon grape seed oil or vegetable oil
  • 2 cups vegetable broth
  •  3/4 cup water
  •  4 tablespoons juice of lime, divided 
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  •  Zest of one lime 
  •  1/2 cup of fresh chopped cilantro 
  •  1/2 teaspoon salt


  1. To the instant pot, add rice and grape seed oil. Using a wooden spoon, stir to coat the rice with the grape seed oil. (this will help it not stick to the bottom of the pan.)
  2. Then add the broth, water, 2 tablespoons of lime juice, smoked paprika and cumin to in the Instant Pot. Lock the lid in place and push the “Rice” button on the Instant Pot. Set for 12 minutes. When the Instant Pot finishes it’s cycle, do a natural release for 5 more minutes. Then do a quick release for the remainder of the pressure. Carefully remove the lid.
  3. Transfer the rice to a large bowl. Fluff the rice with a fork. Then add 2 tablespoons of lime juice, lime zest, chopped cilantro, and salt. Stir and fluff the rice again with a fork. Serve warm.
