Description
Soft, chewy, and lightly sweet, these Banana Oatmeal Cookies are an easy wholesome treat made with oats, ripe bananas, and chocolate chips.

- 2 cups quick oats
- 3 overripe bananas, about 2 cups
- 2 tablespoons brown sugar
- 2 tablespoons honey
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup mini chocolate chips
Instructions
- Preheat oven to 350°F.
- To large bowl add banana, brown sugar, honey, egg and vanilla. Using a spatula mix everything together.
- Next add in oats, cinnamon and salt. Mix to incorporate everything.
- Lastly, add chocolate chips and mix until everything is well combined.
- Line a baking sheet with parchment paper or a silicone mat.
- Using an ice cream scoop about 2 tablespoon, scoop batter and place on prepared baking sheet. Keep them about an inch apart. They don’t spread to much.
- Baked for 12-15 minutes until the tops are just set.
- Remove from oven and let rest on a baking rack for 5-10 minutes before eating. Serve.
