Description

A great healthy alternative to french fries, these Baked Asparagus Fries are made with a light Lemon Herb Aioli for dipping. They’re such a fun and tasty appetizer!

Ingredients

Asparagus Fries:

  • 2 lb.s of  asparagus spears
  • 1 cup of panko
  • 1/3 cup of parmesan
  • 1/2 teaspoon of dry basil
  • 3 egg whites, beaten

Lemon Herb Aioli

  • 2 tablespoons of your favorite fresh herbs {thyme, basil, rosemary}
  • juice of 1 lemon
  • 1/2 cup of mayo
  • 1/8 teaspoon of garlic powder

Instructions

  1. Preheat oven to 400.
  2. In a small bowl mix panko, parmesan, and dry basil.
  3. In another small bowl, lightly beat egg whites.
  4. Dunk the Asparagus spears in beaten eggs white first then in the panko mixture.
  5. Place on baking sheet and bake for 20 minutes.
  6. In the meantime, in a small bowl mix, fresh herbs, lemon juice, garlic powder, and mayo. Set aside.
  7. Remove asparagus fries from the oven and serve with the aioli.
