A delicious Avocado Chicken Salad topped with a tangy Honey Mustard Vinaigrette. Great if you’re looking for an easy, healthy salad to make during the week.

Ingredients
Dressing:
- 2 T. dijon mustard
- 4 T. of vinegar
- 4 T. canola oil
- 1 tsp. dry basil
- salt & pepper
Salad Ingredients:
- 4 cups of fresh spring mix salad
- 1 cooked chicken breast, chopped
- 1 avocado, diced
- 2 oz. of crumbled goat cheese
- 1/3 cup of pecan pieces
- 1/2 cup of roasted cherry tomatoes
Instructions
- For the dressing: Mix together Dijon Mustard, dry basil, vinegar, canola oil, and salt & pepper to taste. {this will be tangy from the vinegar, if you want it less tangy add less vinegar}. Whisk together until thickened. Set aside.
- Time to assemble the salad: place Fresh Spring Mix Blend in a bowl, top chopped cooked chicken breast, diced avocado, crumbled goat cheese, pecan pieces, and roasted cherry tomatoes. {to roast tomatoes, place in 400ยบ oven for 20-25 minutes}
- Drizzle the salad with Honey Mustard Vinaigrette. Enjoy!
