A delicious Avocado Chicken Salad topped with a tangy Honey Mustard Vinaigrette. Great if you’re looking for an easy, healthy salad to make during the week.




  • 2 T. dijon mustard
  • 4 T. of vinegar
  • 4 T. canola oil
  • 1 tsp. dry basil
  • salt & pepper

Salad Ingredients:

  • 4 cups of fresh spring mix salad
  • 1 cooked chicken breast, chopped
  • 1 avocado, diced
  • 2 oz. of crumbled goat cheese
  • 1/3 cup of pecan pieces
  • 1/2 cup of roasted cherry tomatoes


  1. For the dressing: Mix together Dijon Mustard, dry basil, vinegar, canola oil, and salt & pepper to taste. {this will be tangy from the vinegar, if you want it less tangy add less vinegar}. Whisk together until thickened. Set aside.
  2. Time to assemble the salad: place Fresh Spring Mix Blend in a bowl, top chopped cooked chicken breast, diced avocado, crumbled goat cheese, pecan pieces, and roasted cherry tomatoes. {to roast tomatoes, place in 400º oven for 20-25 minutes}
  3. Drizzle the salad with Honey Mustard Vinaigrette. Enjoy!
