Sweet Potato Black Bean Enchiladas


Prep and Sautée

Preheat the oven. Add the oil to a pan over medium-high heat. Cook the onion and sweet potatoes.

Heat the tortillas

Stir in the black beans and seasoning. Place the tortillas in a clean towel or between wet paper towels and microwave them until warm and bendy.

Roll, Bake and Serve!

Add 2-3 tablespoons of filling along the center of each tortilla. Roll it up and place it seam side-down in the prepared baking dish. Repeat for all the filling and tortillas. Bake them. Add the remaining salsa over the enchiladas. Sprinkle evenly with cheese. Bake uncovered. Remove the enchiladas from the oven. Add your favorite toppings, serve, and enjoy!
