I love baby Yukon potatoes for roasting but Fingerlings are fine too. Baby Red Bliss potatoes are wonderful as well. Whichever type you choose, make sure they’re the baby variety.
Preheat the oven and line a baking sheet with parchment paper.
Add all of the ingredients to a large bowl. Toss the potatoes until they’re completely coated.
Spread out the potatoes on the lined baking sheet. Make sure that they’re not overcrowded.
Pop the tray into the oven for 20 minutes. Flip them over and bake for further or until fork-tender.
Remove the potatoes from the oven. Garnish with parsley or chives and serve immediately.
