Can Chicken Burrito Bowls Be Prepared In Advance?

Absolutely! Prepare them up to 3 days in advance and keep everything in the fridge until it’s time to reheat it. You can also assemble the bowls in individual containers without any heat-sensitive toppings like avocado, lettuce, or pico de gallo.

Blend the Chimichurri

Add the ingredients to a blender. Process them until the cilantro is finely chopped. Set it aside.

Grill the corn

Prepare the grill and cook the corn on each side. Then, cut the kernels off the cob.

Mix the chicken seasoning

Combine the dry seasoning with olive oil then pour it on the chicken

Season the chicken

Rub the mixture into the chicken until completely coated

Cook the chicken breasts

Cook the chicken breast and place them to the side to later slice. 

Assemble the Bowls

Add 1 cup of rice, 1-2 tablespoons of black beans, grilled corn, sliced chicken, pico de gallo, and sliced avocado to each bowl. Drizzle it with chimichurri and enjoy.
