Avocado and Chicken Salad


Make the dressing

Mix the dressing ingredients in a bowl until smooth. Set it aside.

Grill the chicken

Heat the grill and season the chicken. Cook until no longer pink in the center. Remove it from the heat and set it aside for 5 minutes. Slice it.

Assemble the salad

Add lettuce, chicken, avocado, goat cheese, pepitas, tomatoes, cucumber, and red onion to a large bowl. Toss until well combined. Serve with honey mustard dressing on the side and enjoy!
