The Ultimate Grilled Peach Chicken Salad

Grilled Peach Chicken Salad is perfect for summer and done in 30 min! This simple salad recipe is filled with juicy peaches, blueberries, goat cheese, pecans, grilled chicken and drizzled with a honey mustard dressing.  It’s an easy and healthy dinner idea you’re going to love!

A Perfect Grilled Chicken Salad for Summer

Well, we are officially back in the swing of things. Kinda. Let’s just say as much as you can be when you come back from vacation and have to “re-enter” reality. I have the laundry done and folded, and even put away which is a huge deal! Food in the refrigerator and have made dinner every day this week! Woot! Woot! I call that a success.

Although, truth be told. Mentally I’m still trying to wrap my head around work stuff. Creating recipes, writing posts, scheduling social media posts and all that “blog work” entails. Which is a lot! So quick easy and healthy recipes have been a must this week!

The first recipe I made when we got back from vacation was this Summery Grilled Peach Chicken Salad.. and let me tell you. It’s flipping delicious!

First off, since one of the stars in this salad is the PEACH. We need to know how to pick them. 

How to Pick the Perfect Ripe Peach?

Peaches are at their best when they are ripe, they get sweeter and juicier as they ripen. The best way to tell if a peach is ripe is to gently squeeze or press the shoulder of the peach (basically right next to the stem). If the peach gives a little bit it is ready to eat!

Ingredients for this Recipe:

  • Chicken: I used boneless skinless chicken breast for a more lean piece of meat
  • Peaches: fresh peaches, sliced in half or slices
  • Oil:I used grape seed oil for this recipe because I find it doesn’t really have taste, lightly brush the flesh side of the peaches with the oil. This helps prevent the peaches from sticking to the grill.
  • Greens: for this recipe I wanted to add in some fiber so I used baby spinach leaves.
  • Other Add ins: Blueberries, Pecans, sliced Red Onion
  • Cheese: creamy tangy goat cheese adds nice flavor to this salad.

How to Make Peach Grilled Chicken Salad

  1. Preheat grill to medium high heat.
  2. Season chicken with salt and pepper on both sides.
  3. Lightly brush peach flesh with grape seed oil.
  4. Place chicken on grill grates and grill each side for 5-7 minutes, or until chicken is no longer pink. (depending on thickness)
  5. Place peaches on grill grates flesh side down. Grill for 3-4 minutes, or until there are grill marks.
  6. Remove both chicken and peaches from grill and let rest.
  7. In the meantime, to a small bowl add course ground mustard, dijon mustard, honey, apple cider vinegar, salt and pepper. Whisk to mix everything together. Set aside.
  8. Assemble Salad: to a large bowl add spinach, blueberries, red onion, goat cheese, pecans. Slice chicken and peaches and top the salad. Serve with dressing on the side.

Even though this recipe is made on an outdoor grill, you can definitely still make it if you don’t have a grill. Just substitute the outdoor grill for a grill pan or a regular cast iron skillet. Both will still do the trick.

Ingredients

Scale
  • 1 lb. boneless skinless chicken breast
  • salt & pepper to season
  • 6 cups baby spinach
  • 2 peaches, halved
  • 1 teaspoon grape seed oil (avocado or canola would work too)
  • 1/2 cup blueberries
  • 1/4 cup sliced red onion
  • 1/4 cup pecan halves
  • 1 ounce crumbled goat cheese
  • basil, for garnish

Honey Mustard Dressing:

  • 1 tablespoon course ground mustard
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • salt & pepper

Instructions

  1. I am wonderfully surprised by the combination of flavours. This salad was devoured by my family on the 2 occasions that I made it.

    I decided to roast the pecans with some maple syrup and salt before adding them to the salad and found it to be super delicious 🙂
    I also soaked the onion in some salt water to cut some of the flavour for my son before adding them.

    This was one of the best summer salads I have ever made. I did make a lemon based marinade and had the chicken hang out in that for a while first. Such a great combo of flavors.
