Ingredients

  • 8 strips of turkey bacon, thinly sliced
  • 1 T. of coconut oil
  • 1 1/2 cup of fresh spinach
  • 1/4 cup chives, chopped
  • 3 oz. goat cheese, crumbled
  • 8 eggs
  • 1/2 cup of 2% milk

Instructions

  1. Heat medium sized oven safe skillet to medium high heat.
  2. Slice turkey bacon into thin strips.
  3. Add cocount oil and turkey bacon slices to pan. Saute until crispy.
  4. Then add fresh spinach.
  5. Saute until cooked down.
  6. In a separate bowl, whisk eggs and milk.
  7. Add milk mixture to turkey pan.
  8. Stir ingredients together and let sit for 4 minutes. Top with crumbled goat cheese and chopped chives.
  9. Put pan in 350° oven for 10-12 minutes, or until frittata has set. {if you shake the pan, the eggs do not move}.
  10. Slide frittata out of pan onto a cutting board and serve!
