I feel like I could kick myself in the tush right now.

Do you ever feel like you just waste time?

Time is precious. After all when we can’t do something or don’t WANT to do something, our excuse to ‘get out of it’ is ‘I don’t know if I have the time.’ So clearly that means we value it.

So why do we waste it?

Usually the only time I have to work on the blog is during little man’s nap time (which is anywhere from 1.5 -3 hours) and at night after little man goes to bed for the night (so another 1-3 hours before I go to bed.)

The reason I am kicking myself is because I allow myself to get distracted.

Instead of sitting down, no noise, at my desk and working. I will sit down on our couch with the tv on. Stupid tv! And its not even good stuff, its mindless stuff that I don’t have any interest in watching anyways but then because its on, I will watch it because I am sitting there. Which means 1.5 hours goes by and instead of knocking a couple of items off my “to do” list, I have barely knocked off one item!

It got me thinking. Why do we need noise on in the background? To have the TV on, the radio on, my phone beeping from social media notifications, the list goes on. Why aren’t we ok with silence? Even in a conversation, if there is silence for a period of time we feel like we need to blurt out and say something or its going to be “awkward.” Awkward for who? You?

Silence is where we can collect our thoughts, where the ‘magic happens’, where all the noise we have been hearing throughout the day is turned off and we can rest. Silence is where God speaks. If we have the dishwasher, the washing machine, and the tv on; how are we suppose to hear God’s voice more less our own?

Or in my case how am I suppose to sit down and write a post with clarity if I have all these all things on? I’m not! I need to slow down and declutter the noise in my house. I need to be ok with silence.

Why Superfruit? Because the fruits in this dish, while few, are packed a big nutrient punch … call them ‘super’ if you will. Mangoes alone give you your daily dose of vitamin C for the day as well as help with digestion (aka loads of fiber). Add in the blueberries which are filled with antioxidants and pineapple that have Vitamin b-6 and Folate and you have yourself a Tropical Superfruit Yogurt Parfait!!

Ok, so I know that all that yummy vitamin talk is just making your mouth salivate right now, huh. How about the fact that you can make this amazing parfait in just 5 minutes? The sweetness from the pineapple, spiciness from the mango, berry punch from the blueberry, and creaminess from the vanilla greek yogurt is the perfect concoction to take you straight to Hawaii and back in just 10 minutes. Oh… don’t forget toasted coconut too, because what kinda island doesn’t have coconut.

Ingredients

Scale
  • 1 mango, diced
  • 1 cup diced fresh pineapple
  • 1/2 cup fresh blueberries
  • 1 cup vanilla yogurt
  • 1/4 cup toasted unsweetened coconut

Instructions

  1. In a two small bowls, layer mango, pineapple blueberries with yogurt and toasted coconut. Top with more fruit.
