Easy Grilled Chicken Breast with Homemade Spice Rub

This grilled chicken breast recipe makes juicy grilled chicken that’s made even more perfect with a flavorful homemade spice rub! If you’re wondering how to grill chicken, this easy recipe is ready in only 20 minutes and makes the BEST grilled chicken of your life!

My Go-To Grilled Chicken Recipe – It’s So Easy!

There are many ways to cook chicken. And since chicken is the main meat we eat in our house (much to my husband’s chagrin, he’s a beef man) I’ve cooked it just about every way I can think of.

Pan Seared. Baked. Pouched. Grilled. Rotisserie. Raw.

Just kidding not raw… just wanted to make sure you were paying attention. 🙂

I have to say my top two favorite ways to cook chicken are on the grill and by pan searing. Those two methods tend to be the best at giving the chicken an awesome flavor on the outside, searing in all the goodness, and the keeping the center moist instead of dry!

The Secret to Ultra Flavorful Grilled Chicken? Homemade Spice Rub.

Seasoning any protein with just salt and pepper can be great if it’s done right, but sometimes I’m just looking for something a little more flavorful. Sure you could add BBQ Sauce and make it BBQ Chicken. But in todays recipe we are going straight up spice rub blend. YES! 

You can purchase pre-made chicken seasoning packs, but this homemade chicken spice rub is so easy to make and packs so much flavor there is no reason not to give it a try. Here’s what you’ll need:

Chicken Seasoning Ingredients

  • Smoked Paprika – adds a nice smokiness to the chicken
  • Cumin – gives an aromatic nutty flavor 
  • Coriander – really compliments the other spices and enhances the taste of the chicken
  • Garlic Powder – gives the spice rub a hint of garlic
  • Sea Salt – you gotta add salt, it’s the primary seasoning in almost every dish
  • Black Pepper – for the slight hint of pepper

How to Grill Chicken Breast

  1. Bring chicken to room temperature: Make sure that your chicken has rested at room temperature for at least 15 minutes to take the chill off.
  2. Pound chicken: Next, to make sure your chicken cooks evenly, pound the chicken to an even thickness so that everything cooks the same.  
  3. Heat grill: Preheat your grill to medium high heat, approximately 375-400°F. 
  4. Make spice rub: In a small bowl mix the garlic powder, cumin, coriander, smoked paprika, sea salt, pepper, and olive oil. Mix until combined.
  5. Season chicken: Rub seasoning mixture over both sides of the chicken.
  6. Grill: Place chicken on grill and grill each side for 4-7 minutes depending on thickness or until no longer pink.
  7. Rest & Serve: Let rest for 5 minutes to let juices reallocate and slice to serve.

How Long to Grill Chicken Breast

In my opinion, the key to a perfectly grilled chicken recipe is not touching the chicken when it’s on the grill. Once your chicken hits the grill grates let the grill do all the work.

Set your timer for 4-7 minutes, depending on the thickness of your chicken and flip. If the chicken sticks to the grill it’s not done yet. Trust me, your protein will release when it’s finished. 

Chicken is considered “done” when the internal temperature reaches 165° F. Use a meat thermometer to check the temperature. Do NOT cut into the chicken to see if it’s pink this will release all the juices and make your chicken dry. This seems like such a simple thing, but it’s the key to keeping grilled chicken moist.

The best part about todays recipe is it’s done in under 20 minutes, it’s gluten free, and paleo! (And if you want to add a few more in there it’s keto and low carb.. just saying.) Hand down the perfect meal for a weeknight – super light, full of flavor and healthy!

Can You Freeze Grilled Chicken?

Yes! First let your chicken come to room temperature.

Then freeze whole pieces of grilled chicken by wrapping each piece in plastic wrap and placing it in a ziploc bag. This helps prevents freezer burn and also ensures that your grilled chicken won’t stick together. It also makes it easier to only defrost the amount of grilled chicken you want to eat in the future.

Description

Ingredients

Scale
  • 4 chicken breasts
  • 1 teaspoon of garlic powder
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon of ground coriander
  • 1/2 teaspoon of smoked paprika
  • 1/2 teaspoon of sea salt
  • 1/4 teaspoon of ground black pepper
  • 2 tablespoon of olive oil

Instructions

Prepare grill: Preheat grill to medium high heat.

Make chicken spice rub: In a small bowl, mix garlic powder, cumin, coriander, smoked paprika, sea salt, pepper, and olive oil. Mix until combined.

Prep chicken: Rub mixture over both sides of the chicken.

Grill: Place chicken on grill and grill each side for 4-6 minutes depending on thickness. You just want to make sure there is no pink in the middle.

Rest & Serve: Let your chicken rest for 5 minutes, then serve!

    1. Yes, definitely. It’d bake at 450Ā° for 15-18 minutes depending on the thickness of your chicken breast.

  30. Came across this recipe because we needed a basic chicken spice mix (for chicken on homemade pizza, didn’t want to put it on bland). This was one of the first results on google and I didn’t really expect anything special. But oh my gosh this was SO GOOD. My boyfriend and I were huge fans and the chicken was the star of the pizza. Definitely gonna use this spice mix for other purposes as well.

    (in case people wonder I made 2 small changes because I didn’t have garlic powder: I used 2 cloves fresh garlic instead and added 1/2 tsp of onion powder because I feel that works well when subbing garlic powder by fresh)

  31. Outrageously good. I add a few things like a bit of Chipotle or African Cayenne to give a touch of ”zing”. I have a dual infra-red and conventional bbq so I zap it about 90 seconds on each side at over 1000 degrees then wrap and seal it in foil on the top shelf, about a 400 deg bbq for 7-12 mins, depending on breast size. I use my handy=dandy remote reading thermometer and as soon as it hits 160F it’s outta there……..gains a few more deg to make 165. It will dry out very quickly if you cook it too long. When cooked just long enough, it is incredibly flavorful, tender and juicy. Our favorite way to serve is on a hollowed out Costco Kirkland sandwich roll with a mayo/chipotle power dressing. It was so good I bought bulk qtys of the ingredients, made a 5 pound batch (thats A LOT of chicken breasts) and gave it to friends as gifts. They’re still thanking me (probably campaigning for more truth be known). While the ingredients are fairly plebeian, the recipients think its made of cardamom and saffron…… I also added a bit more salt, a finer grain kosher as I like the crusting effect on the high temp bbq. I can’t thank you enough for this recipe, it is now the only way we care to eat chicken, at least grilled.

  33. Delicious! Had two packets of thinly cut chicken breasts (strips) so doubled some of recipe (not salt nor garlic) and put less cumin, per preference. This is a new favorite! Thanks for sharing!






  34. I added some herbs to it, thyme and basil. 1/4tsp hot chilli powder for kick. Ranch sauce on the side. Mixed some in. 9/10 with veggies garlic and onions in a wok.

  61. Tried this seasoning rub last night on chicken drums and thighs and it turned out excellent! I applied the wet rub on the chicken about an hour before cooking and let it sit in the fridge, then easily put it on the grill. The skin crisped up perfectly and the spices were a tasty blend.   66. This rub was perfect. I only used 1 TBS oil and same amount of spices for 20 oz of chicken breast. I don’t have a grill, so I cooked it by searing it on a cast iron skillet for 5 mins on one side and 3 in the other. Then put it in the oven at 400 degrees for 15 mins (the thicker one needed 20). So juicy and delicious!!!

  67. Guess what just happened? I’ll tell ya what just happened! I made this chicken and it is wonderful! This morning I cut up the chicken breast into small chunks and sprinkle the rub all over it and put it in the fridge until I got home this evening and cooked it. Added a little canola oil to a pan.     I always make my chicken in the crock pot because I am clearly the most creative person everrrr. My husband was just sweetly commenting the other day about our bland chicken dinners…perhaps we need to add this delicious grilled chicken to the rotation. šŸ˜‰ Loving that spice rub!

    1. next time instead of saying 3 breasts, put the pounds, they come in all sizes…. This just leaves room for an under seasoned or over seasoned chicken…. looks good though…. needed more salt…..
