Strawberry Orange Ice Cream with Chocolate Chips

Welcome to another addition of Mystery Dish! For those of you who are new to Mystery Dish here is a quick run down. There are 12 bloggers in this group, each month, one of us “hosts” the Mystery Dish ingredients for that month. {meaning we pick the ingredients the other bloggers have to use to cook with}  Once the ingredients are given we have until the end of the month to come up with a dish. Then we reveal those dishes to YOU! 🙂

This month, Allie over at Baking a Moment was the host, and let me tell you. I was actually a little stumped this month. First time ever! I was really trying to stick to the Paleo diet and wanted to make a dish that we could eat, that had a couple of the mystery dish ingredients in it, and stay budget conscious. The ingredients this month were:

  • Champagne
  • Strawberries
  • Oranges
  • Beets
  • Filet Mignon
  • Lobster
  • Cream
  • Chocolate
  • Rose Water
  • Rice

Now you see my dilemma.  My first idea was to make Beet Ice Cream using coconut milk and then added some chocolate chips. I know, sounds kinda weird. A vegetable ice cream!?!? But thats what Mystery Dish is all about right? Well, let me tell you. NOT GOOD!!!!  Vegetables were not meant to be in ice cream. So, that one got thrown out.

Second attempt was to make Strawberry Orange Ice Cream {using Coconut Milk} and then throw in some Mini Chocolate Chips. Ding ding ding… we have a winner!

Not only is this dish dairy free, it is also sugar free, which makes it Paleo! {woot woot} It is also absolutely delicious! The strawberries totally make this dish shine, the coconut milk makes it nice and creamy and then there is the zing from the orange zest. I hope you give it a try, it will definitely wow you!

How to Make this Satisfying Strawberry Dessert

To get started, place freezer safe bowl and freezer bowl of ice cream maker in the freezer 24 hours prior to making the ice cream. Hull and halve 2 cups of fresh strawberries.

Oh man, I so love the idea of doing mystery ingredient posts! It must be so much fun! Almost like being on an episode of Chopped!

    1. I know! Its my favorite part about the mystery dish challenge, but it always challenges your “culinary chops”.

I keep telling my husband that we need to have a chopped date night, where he just shows up with random ingredients, gives me 45 minutes and I have to create a dish. I think I’d be more nervous about the time then anything else. šŸ™‚

    1. I know right! Love it! The creaminess from the coconut milk is awesome. I’m glad I tried again after the beet ice cream too Cate. šŸ™‚

  9. Oh wow, this ice cream is so pretty! Love the pink and how festive it is šŸ™‚ Beets would’ve been impressive, but you can’t go wrong with strawberries. Or ice cream. Especially ice cream! šŸ™‚

    1. Thanks Mary! Yeah, the beets were super pretty.. and awesome redish pink color but totally not there on taste. You are right, you can never go wrong with strawberries or ice cream. šŸ™‚

    1. Very true, the beets were fun and the color was awesome but not so good on flavor. The second time was the charm. šŸ™‚ Thanks so much for sharing sweet friend. šŸ™‚

    1. hahaa.. I know! Oh well, it happens to the best of us. šŸ™‚ Although, I’m kinda glad I wasn’t the only one that had “recipe block” this month. Your cupcakes seriously sounded sooo good Jen, can’t wait to try those. Thanks for the sweet encouragement chica, hope you have a great rest of the week!

Looks delicious! I don’t think beets in ice cream would be good either but you found a winner for sure! šŸ™‚

    1. Thanks Melanie.. yeah i guess my “thinking out of the box” with the beets back fired. But luckily I got this winner. šŸ™‚

    2. haha.. I know. I just thought, well, they are naturally sweet.. and I like them.. Why not try them in ice cream? bahahah.. not good! šŸ™‚ Glad I switched to the strawberries, MUCH better!

    1. haha… no worries. I was up for the challenge. I was just wishing I was off the paleo! I was thinking filet mignon with creamy mushrooms sauce and goat cheese. None of which I could have. šŸ™ Thanks on the photo props.. means alot girl! šŸ™‚ Great ingredients this go around Allie!

I love that you took a Paleo route here! Now I just need to get my hands on a darn ice cream maker!

    1. haha… you can make it without an ice cream maker too. Just blend it like normal and then throw it in the freezer safe glass bowl and your good to go. The ice cream maker just makes it more soft serve consistency. šŸ™‚

This looks so amazing Krista!! I love the use of coconut milk and fruits!! You definitely made the ingredients work for your diet. I’m thinking I need to invest in a nice cream maker considering how much we consume in the summer.

    1. Oh for sure you do. Plus, ice cream goes perfect with all those sweet treats you make. šŸ™‚

The coconut milk in this was a perfect substitute for regular milk, it was just as creamy as the original.

BWAHAHAHAHAHAHAHAHAHA!!!! Oh my gosh, I’m picturing your face after tasting the beet ice cream and am cracking up! I can’t see it being very tasty either, although I bet it was a gorgeous color. I think cucumbers and carrots may be the only kind of veg I’d be willing to attempt putting in ice cream (cucumber melon smells good, so it has to taste good right? And come on, carrot cake ice cream. Yes). I didn’t know you were going Paleo, this had to have been TOUGH thinking up something. Way to show up the challenge by killing it with what looks to be delicious ice cream goodness. You can take anything the gals throw at you šŸ˜‰

    1. haha.. well my face was pretty funny but my husbands was hilarious!!!! He looked and me like I was crazy. I thought it was a good idea, but CLEARLY soooo not. Thats the fun of mystery dish though. šŸ™‚ The whole paleo thing was for a 21 day fast we did with our church, but I will probably stick with it for the most part.

That carrot cake ice cream sounds good!
