Welcome to another addition of Mystery Dish! For those of you who are new to Mystery Dish here is a quick run down. There are 12 bloggers in this group, each month, one of us “hosts” the Mystery Dish ingredients for that month. {meaning we pick the ingredients the other bloggers have to use to cook with}  Once the ingredients are given we have until the end of the month to come up with a dish. Then we reveal those dishes to YOU! 🙂

This month, Allie over at Baking a Moment was the host, and let me tell you. I was actually a little stumped this month. First time ever! I was really trying to stick to the Paleo diet and wanted to make a dish that we could eat, that had a couple of the mystery dish ingredients in it, and stay budget conscious. The ingredients this month were:

  • Champagne
  • Strawberries
  • Oranges
  • Beets
  • Filet Mignon
  • Lobster
  • Cream
  • Chocolate
  • Rose Water
  • Rice

Now you see my dilemma.  My first idea was to make Beet Ice Cream using coconut milk and then added some chocolate chips. I know, sounds kinda weird. A vegetable ice cream!?!? But thats what Mystery Dish is all about right? Well, let me tell you. NOT GOOD!!!!  Vegetables were not meant to be in ice cream. So, that one got thrown out.

Second attempt was to make Strawberry Orange Ice Cream {using Coconut Milk} and then throw in some Mini Chocolate Chips. Ding ding ding… we have a winner!

Not only is this dish dairy free, it is also sugar free, which makes it Paleo! {woot woot} It is also absolutely delicious! The strawberries totally make this dish shine, the coconut milk makes it nice and creamy and then there is the zing from the orange zest. I hope you give it a try, it will definitely wow you!

How to Make this Satisfying Strawberry Dessert

To get started, place freezer safe bowl and freezer bowl of ice cream maker in the freezer 24 hours prior to making the ice cream. Hull and halve 2 cups of fresh strawberries.

Place in a blender. Add two 15 oz. cans of Coconut Milk. {usually in the Thai or Asian section of the grocery store}.

Add 1/2 teaspoon of fresh orange zest. Next add 1/3 cup of agave nectar. Blend until smooth.

Add 1/2 cup of mini semi-sweet chocolate chips, do not blend again.

Transfer strawberry mixture to ice cream maker and follow ice cream maker instructions to churn ice-cream.

Eat right away or transfer to prepared freezer safe container to eat later.

Ingredients

Scale
  • 2 cups of strawberries, hulled and halved
  • 2 15oz. cans of coconut milk {full fat}
  • 1/2 teaspoon of orange zest
  • 1/3 cup of agave nectar
  • 1/2 cup of mini semi-sweet chocolate chips cookies

Instructions

  1. Place freezer safe bowl and freezer bowl of ice cream maker in the freezer 24 hours prior to making the ice cream.
  2. Place strawberries, coconut milk, orange zest, and agave nectar in a blender.
  3. Blend until smooth.
  4. Add 1/2 cup of mini semi-sweet chocolate chips. Do not blend.
  5. Transfer strawberry mixture to ice cream maker and follow ice cream maker instructions to churn ice-cream mixture.
  6. Eat right away or transfer to prepared freezer safe container to eat later.
