This Strawberry Nectarine Bruschetta not only delivers on flavor and freshness but is the perfect Appetizer!

Have you ever had one those days where you ate way to much for lunch and are left feeling not so hungry for dinner? Yeah, that was me the other day so I decided to make this Strawberry Nectarine Bruschetta.

I had actually first tried this awesome Bruschetta on the day of my brothers wedding. When us girls were getting all glammed up in the morning, a friend of the mother of the bride {who was also a caterer} stopped by to make a bridal brunch. These Strawberry Nectarine Bruschettas were on the menu.  Not only were they so pretty and cute to look at, but the flavor combinations were amazing. The crunch from the toasted baguette, the creaminess from the goat cheese, the tartness from the strawberries, and freshness from basil. YUM! You will love it! It is the perfect Appetizer, or lunch, or dinner. 🙂 All I have to say, is if you bring this Strawberry Nectarine Bruschetta to a party, you will definitely be the favorite! 🙂

To get started, dice 1 nectarine into small pieces and place in a small bowl. {cut around the main seed in the center}

Hull {remove top} and finely dice 8 strawberries and put in bowl with nectarine.

Halve 12 cherry tomatoes and put those in the bowl.

Add 2 Tablespoons of finely diced red onion, 2 1/2 Tablespoons of freshly chopped basil, 1/4 teaspoon of garlic powder, and a pinch of salt. Mix all the ingredients together and set aside.

Cut 1 baguette loaf into 1/2″ pieces, drizzle with olive oil, and put under oven broiler until slightly browned. {approximately 3-4 minutes}

Evenly spread 4 oz of softened goat cheese over toasted baguette pieces.

Top each baguette piece with a little bit of the Strawberry Nectarine Bruschetta.

Ingredients

Scale

Strawberry Bruschetta:

  • 2 cups strawberries, hulled and finely diced
  • 1 garlic clove, minced
  • 1/4 cup fresh basil, chiffoned
  • 1 tablespoon olive oil
  • salt to season

Toasted Bread:

  • 1 french bread loaf, sliced into 1/2“-1” slices
  • 4 tablespoons unsalted butter, melted or olive oil

Other Items:


Instructions

Strawberry Bruschetta:

  1. To a bowl, add strawberry, garlic, basil, olive oil and salt.
  2. Gently toss with a spoon to combine everything and set aside.

Toasted Bread: 

  1. Heat oven to 400°F.
  2. Add sliced bread to a baking sheet.
  3. Brush the top of each slice of bread with the melted butter or olive oil.
  4. Bake for 5-7 minutes or until bread is slightly toasted.

Assemble Bruschetta:

  1. Evenly spread softened goat cheese over toasted baguette pieces.
  2. Top each baguette piece with a little bit of the Strawberry Bruschetta and drizzle with Balsamic Reduction. Serve.
