An Easy Vegetarian Dinner Idea

Somedays seem like ordinary days, but it’s crazy how fast things can change in a matter of seconds!

Friday morning, seemed like any other day. I had a “plan” for what the day was going to look like. I woke up, went to BodyPump, took my little man to swim lessons, headed home and cleaned up the house and made sure it was “photo ready.” When I finished I looked at the clock and realized I had about 30 minutes before the photographer arrived to take photos of our house, so me and the little man headed outside to play.

Everything was fine, we were having a blast playing and riding up and down the street… then on minute 29 it happened .. and everything stopped in that moment.

At the time we were headed back to the house, little man riding his bike, and me walking right behind him. Every once in a while he decides to be silly and move his handlebars back and forth so that his bike wiggles. But this time his front wheel caught a corner of grass and he fell down on the sidewalk. Honestly it didn’t look bad. He wasn’t going fast, just caught the corner wrong.

Immediately he started crying. I ran up started to pick him up and then I saw it. His forearm was broken. Normally I wouldn’t be able to tell, but this time his arm went straight and there was a bump from where the bone was broken and was pushing the skin up.

He just looked at me and kept saying … “mommy, mommy, it hurts… mommy…”

I was in full momma bear mode. My baby was hurt and there was nothing I could do to fix it. I scooped him up in my arms, ran him to the car, buckled him up and got to a free standing ER in 10 minutes. I carried him into the ER and immediately told the reception, “I have a little boy with a broken arm.” Luckily they weren’t busy and we were able to get right back there.

I think the hardest part for me was seeing my little boy in so much pain and not being able to help him. I couldn’t snap the bone back in place, I couldn’t take the pain away. At that point he was in a wheelchair and so I couldn’t even hold him. All I could do was bend down so he could see my eyes and tell him mommy was right there, that I wasn’t leaving and it will be ok.

All I wanted to do was cry. My husband arrived about 15 minutes later (which seemed like eternity)… as soon as I turned and saw him my eyes welled up with tears and it just all came out. I was being strong and didn’t want my little guy to worry so I was holding every thing in. We swapped places, I walked out into the hall and he walked in to comfort our little man. They took x-rays and confirmed it was in indeed broken, both his ulna and radius (the forearm bones) were broken in half. The doctor told us he had to sedate our son, he would just be sleepy but still awake and then reset the bones. My heart sank, but I knew it would relieve the pain so we went forward with it. It was the hardest thing ever to watch … all I wanted to do was stand in his place so he wouldn’t have to feel the pain. After all that they were finally able to put a splint on him and wrap it with ace bandages that would accommodate the swelling.

It was probably one of the worst parenting days I’ve had, everything I didn’t want him to experience he did and it broke my heart.

Later that night, as I was sitting in bed. All I could do was recall the events that had unfolded that day, the looks on my little guys face, the fear in his eyes, the pain he was experiencing.

And at that moment I had a realization. While I love my son with all my heart, try to be the best parent I can be, and protect him from things that can hurt him. I can only do so much. I will not be able to shield him from every pain he might experience. The only thing I CAN do is place him in God’s hands. He is the ultimate parent. He is a way better parent than I could ever be. He will watch over him every step he takes in life.

Spinach Lasagna Rolls: A Simple Lasagna Recipe

Ok, onto the recipe for today, these Spinach Lasagna Rolls. Lasagna Rolls have become my new favorite way to make Lasagna. For one it is way easier to serve than regular lasagna and two it is definitely lighter on calories!

This Spinach Lasagna has all the same great flavor of regular lasagna! I guarantee you will never go back to making regular lasagna again after trying these Lasagna Rolls! They’re packed with delicious filling, wrapped in thick lasagna noodles, topped with less marinara sauce, and slight amounts of cheese for the ultimate topping. I know you and your family will fall in love! 🙂 (and it’s a great way to get your kiddos to eat veggies)

Description

Ingredients

Scale
  • 10 sheets of lasagna
  • 1 tablespoon olive oil
  • 1/2 cup diced red onion
  • 2 garlic cloves
  • 4 cups fresh roughly chopped spinach
  • 1 1/2 cup small curd cottage cheese
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon dried basil
  • salt & pepper
  • 2 cups marinara sauce
  • 3/4 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 350.
  2. Heat a large skillet to medium high heat, add olive oil and onions. Saute for 2-3 minutes, until translucent.
  3. Next add garlic and saute for 30 seconds, immediately add spinach. Wilt down for 3-4 minutes. Season with salt and pepper.
  4. Remove from heat and let rest for 5 minutes.
  5. In the meantime, bring a large pot of water to a boil and cook lasagna noodles till al dente {written on box}. Spray a baking sheet with cooking spray so noodles do not stick. Remove noodles and place on baking sheet until cool enough to touch.
  6. In a small bowl, add spinach mixture, cottage cheese, garlic powder, dried basil, and salt & pepper to taste. Mix until combined.
  7. In a 13×9 inch pan add 1 cup of marinara sauce to the bottom.
  8. Start to assemble lasagna rolls. Place lasagna noodle on a flat surface. Add about 1-2 tablespoons of the filling mixture to the noodle and spread out even.
  9. Roll from one end to the other and place rolls in pan.
  10. Finish off with 1 cup of marinara sauce on top of finished noodles.
  11. Place 1 tablespoon shredded mozzarella cheese on each lasagna roll.
  12. Cover with foil.
  13. Bake for 40 minutes.
  14. Devour!

  1. This sounds a lovely dish, looking amazing in pictures, my family will love this. rolls are something my kids love the most in mid evening snack.

I went through this exact same scenario with my 2 yr. old when he decided to climb furniture after I took him off of the coffee table 10 plus times, fell backwards and broke arm in the same areas. My husband was supposedly at a “business meeting” with friends that ended up being an excuse to get drunk, so when I called him I was cursed out and called the worst mother ever, etc. I drove 40 miles with my toddler and autistic child to the children’s hospital alone, after waiting an hour at urgent care to be told that’s where we had to go. Then, interviewed by staff to make sure it wasn’t a child abuse case, I was bawling the whole time. We got out at midnight and got lost in a rough area. My autistic son came to the rescue and helped me find the freeway home. spouse still thinks this is a “hilarious memory”, when my kids and I only remember it as a very difficult, scary night. so glad your son made it out okay.

    1. OH my goodness! I can’t even imagine! When you’re kid gets hurt and you can’t help them fix it .. it’s the most helpless feeling ever! UGhhh… sooo horrible! I’m sorry girl, glad you guys made it through that rough night and came out on the other side, those are the worst. They leave you feeling physically and emotionally exhausted!!!

    1. Agreed! It was crazy to look at his arm like that, I definitely had a little panic but had to get myself together so he wasn’t scared and we got to the hospital.

      And you are right… comforting lasagna rolls are a great way to destress.. that and a glass of wine. šŸ™‚

  4. I’m so sorry to hear about the little ones arm! I can only imagine how terrifying that must have felt. I’m so happy they were able to get him in right away. When he got home I’m betting a giant plate of this lasagna would help cheer him up right away!

    1. Oh my goodness it was the worst moment ever, but he is a champ and has figured out to play like he use to with one arm.
