Ingredients

  • 2 T. olive oil
  • 1 tsp. lemon zest {1 lemon}
  • 1 T. lemon juice
  • 2 cloves garlic, minced
  • 1 tsp. ground cumin
  • 1/2 tsp. ground coriander
  • 1/2 tsp. salt
  • 1 pound boneless skinless chicken breast, cut into 3/4-inch cubes
  • 8 (10-inch) skewers
  • 1 1/2 cups seedless green grapes
  • Cooking spray
  • 1 lemon, cut into wedges

Instructions

  1. Cut 1 lb. or 4 chicken breasts up into 3/4 inch cubes {or smaller} and set aside.
  2. In a medium sized bowl whisk together olive oil, lemon zest, lemon juice, garlic cloves, cumin, coriander, and salt.
  3. Add the chicken to the marinade and toss to coat. Marinate the chicken for 20 minutes.
  4. Prepare outdoor grill to medium high heat. Remove green grapes from stem and place in bowl.
  5. Grill the chicken until cooked through, about 3 to 4 minutes per side. Grill grapes for about 2 minutes.
  6. Serve with lemon wedges.
