How to Make Bacon Sweet Potato Hash

Making this recipe is just like making your favorite hash, but with sweet potatoes! It’s easy.

  • Cook the bacon. Preheat the oven to 400F. Add the bacon to a large skillet over medium heat. Let it cook for 4-5 minutes, or until crispy. Remove the bacon and set it to drain on a paper towel-lined plate.
  • Cook the sweet potatoes. Add the sweet potatoes to the skillet. Let them cook for 5-7 minutes or until they start to brown.
  • Add the veggies. Place the red onion, pepper, paprika, and salt in the skillet. Stir well and sautée everything for 3-5 minutes or until tender.
  • Bake it. Return the bacon to the skillet and stir to combine. Pop it into the oven for 10 minutes. Remove it from the oven.
  • Add the eggs. Make 6 wells in the potato mixture and add an egg to each one. Return the skillet to the oven and cook until the eggs are cooked to your desired doneness. I cook mine for 5-7 minutes.
  • Serve it. Remove the skillet from the oven. Add sliced avocados and chives on top. Serve and enjoy.

How to Store & Reheat Leftovers

Once fully cooled, refrigerate the leftovers in an airtight container for up to 5 days. To reheat it, microwave it for up to a minute or until warm. You can also heat it in a pan over medium heat for 6-7 minutes, stirring occasionally. The oven works too at 350F for 5-10 minutes. Unfortunately, this recipe doesn’t freeze well.

  • 4 strips of smoked bacon, diced
  • 2 sweet potatoes, diced (about 45 cups)
  • 1 cup diced red onion
  • 1 red pepper, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 6 eggs
  • 2 avocados, sliced

Instructions

  1. Preheat oven to 400 degrees.
  2. To a large skillet add diced bacon. Cook until crispy, about 5 minutes, stirring throughout. Remove
  3. the bacon and place on a paper towel lined plate.
  4. Add sweet potatoes to the skillet. Let cook for 5-7 minutes until they start to brown.
  5. Next add in the red onion, red pepper, smoked paprika, and salt. Stir to combine and saute for 3-5 minutes until veggies start to get tender.
  6. Add the bacon back to the pan, stir and place skillet in oven.
  7. Bake potato hash for 10 minutes. Remove from oven.
  8. Create 6 wells in the potato mixture and add an egg to each well. Place skillet back in the oven and cook until eggs are your desired doneness. (I cooked mine for 5-7 minutes)
  9. Remove from oven, add sliced avocado and diced chives. Serve.
